put a chunk of cheese in the middle, wrapped in basil. Brie works well.

and worcestershire sauce for flavouring

seasoning
a well crumbled stock cube
very finely diced onion
a bit of beaten egg to bind together or they fall apart fairly easily.

mix iit into the mixture to help hold the burger together, otherwise they are likely to fall apart.

I always add some very finely chopped onion and some herbs (just use dried mixed herbs). Then add bit of worcestershire sauce and a fair bit of grated parmesan. Then a load of black pepper. A big pinch of maldon salt. And bind it all together with a beaten egg.

IMO the parmesan makes it taste really savoury and yummy.

I agree with everyone else and a squeeze of tomato puree into the mixture works well and you can't really go wrong with chopped fresh herbs. Also a little bit of finely grated lemon peel and a squeeze of lemon juice is nice too.

Jamie Oliver has a gorgeous recipe we love.

Slowly fry a finely chopped onion 'til it is soft but not coloured. Add to the extra lean, good quality beef. Mix with some crushed coriander and cumin seeds and some grated parmesan and a raw egg. Fry.

Unbeatable.

Yes don't forget the egg or you will just have a pan of vague mince shapes (voice of experience)

I have had this problem before and thought I was cooking them wrong , so I just beat it up a bit and then put it in with the onions, mince etc and that should hold it all together? Thanks, can you tell I'm really rubbish at cooking things myself?

Wouldn't necessarily buy extra lean steak mince as can be too dry. Just buy normal mince, but from a decent proper butcher.

Another thing, when you put them into the pan to fry ust leave them for a while, don'rt prod and interfere (as I am always tempted to) or they fall to bits. They also go nice and seared on the bottom, makes 'em taste lovely.

Ooooh, I'm all excited now , taken the mince out already so will pop along to Tescos tomorrow and get the rest of what I need and will let you all know how it goes. Thanks again for all those suggestions!

Yes, just beat the egg and put it in the mince mix last of all, stir it round and then make into patty shapes (this you have to do with your hands and it feels vile!!)

I also add a bit of tomato puree as it stops the burgers looking too grey and gives them a nice taste.
