Does maple syrup go off?

I have about 5 bottles (unopened) which may be up to 5 years old, some glass bottles, a couple plastic. Do you think it will be ok to use?

Unopened should be OK - I would think - esp the glass bottles. Sugar is a preservative, isn't it, and people used to keep homemade jam for years and years.

But why have you got 5 bottles of maple syrup, Blu?

It can't be down to my steely-self-control - I could easily sit down and scoff a litre of ice cream with maple syrup!

I had a 4 year professional (and personal - at times ) exchange programme with Toronto, I always brught some back, people always brought some here as a gift. Perhaps I should host a MN pancake day meet-up!

I've got an extremely good American style pancake recipe if you're interested. My brother is a bit of a wally and spent a great deal of time perfecting it. Always turns out perfect though.

Yes, french toast. Add a bit of cinnamon to the egg, very niiiiccceeaaa.

Can't find the recipe on my outlook. He sent it to me three years ago so I think it's been deleted but I've got it at home because I use it all the time. It'll be Monday though unfortunately.

Got it! Bro emailed it over again. This is a Canadian recipe so everything is in cups and spoons. A cup is a standard coffee mug, a tbsp a large serving spoon and tsp a desert spoon...

combine:

3/4 cup self rising flour
1 tsp baking powder (if you got it)
1/4 tsp salt
2 tbsp sugar
1 egg
1/2 cup of milk
2 tbsp melted butter

combine dry and wet separately then combine together. Mix well and let stand in fridge for about 1/2 hour (you don't really have to do any of that. like I said bro is a wally)

pour onto hot buttered frying pan and flip when bubbles appear on top. cover with lots of butter and maple syrup.

No, probably not if it hasn't been opened. It does go off once opened but it takes ages. It crysalises over time.

Here's a wierd thing. It's cheaper to buy in the UK than in Canada (where is comes from) and it's the same stuff from the same place - Grade A quality stuff. Anyway, there's your fact for the day!

saying that, it probably would have still come out fine.

Thanks DC: I NEARLY used your recipe - but had some of those ready made Aunt Bessie ones in the freezer. Anyway - no ill effects from the ancient syrup!

Apparently the honey found in the pyramids was still perfectly edible. Bacteria can't thrive in pure sugar.
