Vegetable Muffins

Just did a search and can't find a recipe. Have I seen this on here before or in the A Karmel book or just heard of it ? Basically just trying to find a way to add some veggies to the carbs for tea. My lo is pretty good but isn't that keen on pasta so putting a hidden veggie sauce on doesn't work. He loves veggies to pick at at lunchtime but won't do the same at tea when he's a bit fussier....#

Veggie muffins might do the trick - he loves all things bready/cakey etc...

Any recipes out there?

Use a carrotcake recipe and bake it in muffin cakes. Alternatively use grated courgette instead of the carrot, peel it first if you don;t want the tell-tale green specks. You can cook and puree sweetcorn to make the batter too.
Use pumpkin/butternut squash, cooked and pureed, istead if the carrot.(add raisins too if you like) In fact I have a recipe for this in my Muffin recipe book, if you like I can dig it out?

Sparkyb, is that the little spiral bound book? I have one called The Muffin Book or something like that.

Use a basic muffin recipe and grate carrot into it with some raisins, some tinned pineapple and some mixed spice. Lovely! You could also try savoury muffins made with cornbread, with bits of green and red pepper, cheese and chillis if he'll eat them.

sorry - been offline a few days. The bok is the spiralbound one Rantinghousewife and it's called MUFFINS fast and fantastic, by Susan Reimer. The Cocoa/Courgette one goes like this;
10oz pl flour
2 teasp. baking powder
0.5 teasp bicarb
salt
1-2 teasp cinnamon
2 tablesp cocoa powder
1 egg
5 oz soft brown sugar
4 fl oz corn oil
2 fl oz milk
2 teasp vanilla essence
12 oz grated courgette (peeled to avoid green flecks)
3 oz raisins (optional)

Sift flour baking powder bicarb salt cinnamon and cocoa powder.
In a separate bowl beat egg, sugar, oil, milk, vanilla and courgette. Mix well.
Pour all of wet ingredients into dry, stir quickly until just combined. Batter will be lumpy.
Fill muffin cases, bake for 20-25 mins at 190-200 C. (about gas 5 I think)

There's also a Carrot/Pineapple one which is essentially the same, with 7 oz grated carrot and 4 fl oz well-drained crushed pineapple - uses slightly less liquid as the pineapple provides some.

I haven't tried the pineaplle one, mostly I use the Banana one or the choc. I did try the 'summer fruit one' replacing the fruit with mincemeat (couldn't be bothered to do mince pies this year) and it was really nice.
