I want to eat fish at least twice a week but really struggle with fish recipes. I like fish, though not with annoying little bones, but my imagination never takes me further than a bit of fish on a plate surrounded by vegetables. Please help!

There was a really nice red tinned salmon recipe that had aubergine and other things in it but think I lost it - like a tray bake?

This smoked haddock rarebit is lovely. But, if you're upping your fish intake for health reasons, you might want to avoid it, as it uses a mountain of cheese, so can't really be considered healthy! Obviously you can sub the smoked haddock for smoked cod or smoked basa, plus adding a bit of Applewood smoked cheddar in with the regular cheddar improves it too!

Seafood chowder is fabulous with crusty rolls or brown bread slathered in proper butter, and it's really filling.

And you can put in what fish you like. I usually throw in a Lidl fish mix packet as a minimum but a handful of prawns or some crab meat are lovely in it as well.

I often make seafood chowder too, with smoked fish, prawns, tinned sweetcorn and tinned potatoes.
I'm aware lots of people will be horrified with that, but actually tinned potatoes are a great store cupboard ingredient.
I use them in veggie curries a lot too and to make a corned beef hash.

Rick Stein fish recipes are excellent. Loads available online or get one from the library. I have Seafood Odyssey and everything I've made has been fab.

Stir fry vegetables with sauce of your choice topped with strips of flash fried fresh tuna.

We do salmon parcels with lime, ginger, soy and I do stir fry veg and noodles on the side.

Recently did tuna chunks on a deal from Waitrose and made a stir fried rice to go alongside which was lovely and next time I get a Waitrose order will order them again.

Tonight we are having (tinned) tuna jacket potatoes - bake potatoes, remove the flesh then mix it with tuna and low fat cream cheese (low fat because full fat is too rich we find. Quark works okay as well). LOTS of pepper. Sometimes chop in some green pepper or spring onion (not today as putting spring onion in the salad, which is super basic otherwise). Put back in jackets and top with cheese and reheat. Serve with salad. It just makes it a bit nicer and more interesting than slapping some tuna on top of a jacket potato!

Haven't done this for a while but used to do prawns with garlic, butter, lemon and chilli on spaghetti (add frozen peas to the the spaghetti a few minutes before it's done).
