Healthy vegetarian after school snacks

Scoobydoobydoo · 14/02/2022 22:40

Hello
I am looking for some ideas on healthy, filling vegetarian after school snacks for my teen kids.
They do clubs most evenings and dinner tends to be much later to my liking.
They do want something substantial when they get home and we seem to have gone into a rut of beige stuff like brioche, scones etc.
They don't seem to want boiled eggs at that time of the day.
It seems tricky to feed them well without being boring or unhealthy.
Hit me with your suggestions please!
Thanks

Rye bread is good and filling - toasted lightly and spread with humous or cheese spread. Yum!

Quorn sausage rolls would be a bit healthier than brioche?

Cold slice of Spanish omelette.

Cold veggie sausages

Marmite rice cakes or whole meal toast and marmite

Half a tin of soup in a mug?

Overnight oats? Can pop in a Tupperware with nice toppings if seeds and honey and take with you.

I must be missing something, why can’t you eat dinner when they get home?

Thank you for suggestions!
If I stop buying some of the regular unhealthy stuff this should help us eat a bit better.
I will look up the recipes linked.

I batch cook a load of oven baked falafel, with a blend or chickpeas and either sweet potato or butternut squash. They are perfect for snacking.

Baked paprika chickpeas are also good.

I like this soup. I put much less cream in, & no milk. I also don't blend it because I'm lazy I just add a little splash of cream to each bowl. You can have it with no cream & it's still very tasty. And cheap, if you grow the chives, which are pretty easy.
