Lunch meal plan for a very fussy eater!

Wondering if someone can help me with a lunch meal plan for the fussiest lunch eater ever...me!

I hate sandwiches, don't eat butter, mayonnaise, cold pasta, wraps and not a massive salad fan! Don't eat fish or pork and won't eat cold chicken. Basically I'm not a fan of cold stuff.

I don't have a fridge at work but do have a microwave.

At the moment I am just taking a croissant and a little cake bar thing which is not enough and not helping me get through the day.

The challenge I have is having something that isn't reliant on a fridge which seems impossible. I start work at 8 and don't tend to have a lunch break until 1:30-2pm.

Any bright ideas?

I'd make soup or do an extra portion of whatever I'm having for dinner the night before and take it to microwave for lunch. It'll be fine out of the fridge until lunch time.

SparkleTwinkle101 · 12/02/2022 18:11

Colleagues of mine bring microwave meals in to work, either bought ones or homemade/leftovers to heat up; pot noodle/pot pasta/super noodle type add-hot-water meals; jacket potatoes done in the microwave with cheese or tuna (maybe plant based?); microwave packets of flavoured rice/grains/lentils type things, you can even get microwave packets pasta and sauce, or tins of things like curry or chilli to have with microwave rice; one colleague has bought in a toaster and does herself toast with peanut butter or marmite! (Toaster was allowed to stay after it was PAT tested)
If you don’t have a fridge can you not ask employer for one? It’s a fairly basic thing, and you can fit a mini fridge in pretty much anywhere, we just have a 2-shelf countertop one, like a half-size drinks fridge.
Will you eat crackers/oatcakes/ryvitas, with cheese or jarred spreads?

I used to like the mushroom one with a tin of chicken in white sauce warmed in the microwave and stirred in. Filled me up and kept me going for a 15/16 hour shift.

Or the spicy Mexican one on its own/with some tuna.

I love microwave rice, Aldi does them fairly cheaply. Those little tins of sweet corn with a ring pull or sugar snap peas in a microwavable packet splash of soy sauce and it’s perfect for lunch.

Leftovers, just heat until piping hot, 4 hours out of the fridge is fine

HaggisTheGreat · 12/02/2022 18:28

Pasta in a tomato sauce or with pesto and microwave it so it’s warm.
Agree with PP that most things would be fine out of the fridge for a few hours. If you are worried you could get an insulated lunch bag with an ice pack.

I often take tinned soup, no need for a fridge and I find the varieties with lentils or beans keep me going really well. Just check if you need a tin opener.

I got a metal food flask from Amazon. I heat foot up in the microwave in the morning, fill my flask and it's still warm at lunchtime. Saves me waiting to use the microwave at work during my previous 30 min lunch. I take left overs from the previous night / soups / roast veg with halloumi / pasta / noodles etc

Pot noodle, tin of soup, tin of anything really that can be heated.

I love sugar snap peas but didn't realise they did microwave ones!

Tesco does. You can microwave them in the packet they come in. Takes 40 seconds. It’s a little pack, same thing with green beans or they do one with baby corn. Great way to get lunchtime veggies in.

TheDoveFromAboveCooCoo · 13/02/2022 13:28

Just microwave rice on its own isn't particularly healthy though is it. You'll just get a 3pm carb slump.

Can you make a bit extra of your evening meal and take a portion to reheat at lunchtime. You could pop a freezer pack in your lunch box if you are worried about it being out all day.

Mogwiimilkshake · 13/02/2022 13:32

Pot noddle. Mug shot. Soup.

I used to work shifts and kept a supply of stuff like this in my locker.

tinyperson · 14/02/2022 11:56

Salad
Fruit bowl
Sausage rolls

Harp1977 · 14/02/2022 12:01

I use an insulated lunch bag with an ice block and bring leftovers/ soup to reheat. DC also use ice blocks in their lunch boxes. No need to put in a fridge

JustWonderingIfYou · 14/02/2022 12:09

You can just put any sugarsnap peas in a micro safe container rather than buying tiny expensive packets.

What about jacket potatoes? You could take one of the frozen ones and some toppings. Or risotto or stew or any leftovers tbh. Rice with some veggies and sauce would be easy to prep and heat.
