is this ok for Soup

my carrots have gone bad so are in the bin.

I have celery, potatoes, onions and cabbage do you think that would be ok?.

other then that theres peppers, soya beans and sweet corn in the freezer and I have tinned kidney and butter beans.

I'm not sure about the cabbage, but I often make soup with the other 3 veg. I do prefer a higher celery to potato ratio, I usually use some just as a thickener.

You’ve got the Cajun holy trinity. Make a bean jambalaya with the kidney beans and sweetcorn for variety. No potatoes. But only if you’ve got jambalaya spices.

I'd chuck the butter beans in there because I love them, but it doesn't need them as such.

Cabbage finely shredded is great in soup! Bags of flavour.

I put some oddments of cabbage in a soup the other day, with other random veg, and it was delicious. It reminded me of minestrone without noodles.

Also look up Rachel Roddy in the Guardian. She has a cabbage and rice soup recipe and also chickpea and pasta soup (which has a base of onion and celery) which is also one of our favourites.

they were fluffy at the ends, white fluffy mould i thought it best to chuck em

Forget the cabbage and kidney beans because they are horrible and just throw everything else in.

I made soup for the family tonight too - started out with leek and potato as my base idea, chucked in a sad leek, a celeriac, a celery heart that was bendy, and then after simmering everything till it was completely soft I threw in a big bunch of black kale to wilt. Topped off with any random green herbs, a dollop of sour cream and some bacon bits!

I thought if things go moldy you should chuck em out as you dont know how deep the roots of the mold have gone
