Ideas for easy prep or freezable meals for 15+ - plus allergies

I’m asking for the impossible probably

We are hosting our wedding this year. It’s overseas in the town where we live.
Everyone will be staying in hotel the main wedding weekend.
But after we will have around 15 staying at ours or staying locally but eating at ours.

The first day needed is a Sunday when all shops shut here. We will all be at wedding Friday - Sunday.

Needs to be veggie, and then option of gluten and dairy free ( and nut!)

I need to have bought ingredients Thursday before at latest

So far I can think:
Veggie pasta - just roast veg, tomato based. Can get gluten free pasta for the 2, and cheese added by those who can

Bbq - just veggie and meat burgers. Buy part baked rolls ( and gluten free option) - Monday as might be 20-30 people popping in and out, so eating off laps possible

It’s basically to cover lunch and dinner for Sunday, and ideally dinner Monday

I want as easy and little prep as possible as will have wedding stuff to do in Lead up. There’s also 4 under 3 in numbers, and a few older children.

No pre made stuff is really available locally

Big veg curry with rice

Bean chilli with rice, people can add their own toppings based on what they can and can't eat...but I'm thinking sour cream, grated cheese, guacamole

Big tubs of chilli, rice, veg chilli, curry a huge salad and a selection of breads as a 'backbone'.

Things like crisps can be bought ahead and are easy to store ditto popcorn, pasta, rice

Lots of 'finger' fruit so grapes, cherries, segmented citrus fruit for anyone to pick at but easy for small children

Hummus and breadsticks. Other dips.

If you have enough money could one of the hotels supply you with a buffet for the Sunday?

Chilli is a good option but I really don’t like it.

Lots of snacks and fruit is ideal

I could potentially get hotel to make food for us. But we would need to then bring back in already full car, so I’m wondering if logistics are easier to just do at home. But it’s definitely a possibility. Maybe a large goulash/ and veggie goulash?

Instead of chilli you could make Bolognese, that can be had with pasta or with baked potatoes.

You can freeze a lot of sandwiches so if you feel like making a few, but be careful with the fillings.

Curry - I’d do a chickpea, potato and spinach curry, and then a dal too. Served with rice, then nice chutney, pickles, yogurt and popadoms or naan. All the extra bits makes it more of a feast.

Pizzas , with garlic bread and some bags of
Salad for when people are popping in and out. Easy to eat a slice of pizza on the hoof, and cold pizza is as good at hot pizza!

Veggie lasagna or parmigiana type thing - basically something baked in a dish, so it can just be shoved in the oven. Then it can just be served with bread and salad.

On the Sunday I’d do a bigger meal at lunch and then do soup for dinner. Or vice versa.

Jacket potatoes with salads and toppings such as coleslaw, tuna mayo, roast veggies, mixed beans, baked beans, cheese.

Jacket potatoes would be ideal actually. Like you say, lots of toppings for people to mix and match.

Everyone will be at the hotel until 11pm checkout Sunday basically, and would probably have had large late breakfast as it’s served 8-11am. So bigger dinner and easy help yourselves lunch is a bonus.

I think rolls with various fillings and fruit/ snacks will be fine for lunch.

And only 4 people are veggie. But I’m happy to just make it all veggie for ease
