Anyone got an amazing tried and tested meat/ veg chilli recipe?

I’m enetertaining for the first time in ages - in couple of weeks and am going for the easy option of chilli( a veg one also). I can make passable ones but would love to have tips on how to make them super tasty🙂

Make sure you put dark choc or cocoa powder in it. Slow cook too.

Use stewing steak and cook slowly. Add chipotle chilli, chocolate, espresso, finely chopped coriander stalk and simmer with cinnamon sticks, along with the usual spices.

There's a popular recipe for burnt aubergine chilli easily found online.

For a veggie one I use: cumin, paprika, chipotle paste, fresh red chilli, cocoa, coffee, lime juice, passata and a bottle of lager.

If you can't get chipotle easily you can use the usual red chilli and a a spoon of smoked paprika for richness.
My top tip is to make it a couple of days before and reheat it to boiling every day for a couple of days to allow the flavours to develop: it will get hotter so be aware and provide dairy (sour cream, cheese etc, among your accompaniments.

It's lovely with black beans rather than red kidney. I also use a bit of dried oregano.

Also a salsa on top: red onion, cucumber, tomato, coriander, avocado, red pepper and some chilli, finely chopped and tossed in a generous amount of lime juice and some salt. This cuts through the richness of the chilli.

As has been said before, sour cream is great with it (and my DH insists on cheese as well, on the grounds that there nothing which isn't better with cheese).

I use this BBC one. the final quantity is quite large and normally has too much liquid in but it includes a lot of the flavours people have already mentioned that I wouldn’t normally cook with such as Coco powder so I have found it a good starting point.

Definitely the BBC good food burnt Aubergine chilli it's fantastic, though I only put in 1tsp of soy sauce.

The burnt aubergine chilli is genuinely the best chilli I've ever had. I don't burn the chilli anymore, just grill it until charred. I use a couple of Chipotle chillis for the smoky flavour. I also use less liquid than stated - you can always add more if necessary.

All my bolognese and chilli start off the same and each time I challenge to get more veg in, usually about 11 or 12, either finally chopped or grated. Things like onion, garlic, leek, carrots celery, sweet potato, tomatoes, courgettes, peppers butternut squash, turnip, mushrooms etc.

Then keep tasting and seasoning, I add tinned tomatoes, red wine, stock, Worcestershire sauce, tomato puree, tomato sauce, garlic granules, onion granules. It making non veggie I would brown mince separately. Then add any beans and fresh chilli, dried chilli, and chilli sauce to taste.

Very slowly cook, make sure you have a celery/onion/garlic/green peppers base, plenty of cumin, plenty of tomato purée, properly browned your been and vegetables, use half chopped tomatoes/half Passat, smoked paprika a must, plenty of cumin, and the thing that pushes thd flavour over the top: sweet Italian sausage meat (about 1/4 the amount of beef you put in)
