30 plant-based foods a week, so hard

I'm really struggling with getting 30 plant based foods a week as per Tim Spector's advice on gut health.

I've counted last week and I can only get to 17! It's hard as I tend to batch cook for both ease and budget.

How can I get more in? I already include lentils, wholegrain rice, quinoa etc. Any tips welcome! Anyone else trying it?

I find granola a good place to bulk up numbers too. I buy a bag of mixed nuts and a bag of mixed seeds from Lidl, each of which are mix of four different nuts/seeds. Combined with oats that’s nine plants relatively inexpensively and sometimes I add something else like coconut or dried cranberries so I’m on ten plants in one meal.

I was on this thread originally - probably a different name - and was interested to see it pop up. I've been struggling a bit with inspiration for food and interestingly, I DO think my digestion (and possibly Dh and DS too) have all suffered as a result.

On the other hand, since this thread, I've found that my core staple of vegetables that are ALWAYS in the fridge has increased and I have made changes that are permanent - eg I never make a bolognaise now without adding some lentils and usually at least one additional vegetable - mushrooms, carrots, peppers etc. Probably where we've struggled a bit is that we haven't been eating vegetarian as often as we used to becuase DD hates most veggie food and I am trying to cook more meals that she can eat with us. Having said that, we're having a pepper and chickpea curry tonight and a chicken curry tomorrow to which I'll be adding aubergine and butternut.

Ah my thread has been resurrected!
I'm still here trying my best although I got pregnant in December and it all went to shit during the first trimester, I'm back on it with a vengeance now!

Still lack inspo and need more! Been reading Food for Life and determined to diversify.

Maybe it is fine to eat a bit wonky

Bubble and squeak made with swede and potato mash plus a table spoon of sauerkraut, a table spoon of kimchi and a table spoon of carrot salad is really nice.

Do you eat meat? We've had Chicken Cacciatore tonight. Onions, garlic, rosemary, thyme, tomatoes, carrot and olives. Would they be ok?
