We are planning a sunny holiday in a couple of months with a group of friends

We've all agreed one couple will take the lead on Investigating day trips; another looking into restaurants both locally and wherever we visit; another leading the accommodation search. DH&I will be in charge of food for days we eat at the accommodation. It doesn't mean no-one else has any input to any of the above, but means we're not all spending time thinking about the same thing.

it's a way off but I'm stuck at home as a household member has covid (I know I don't have to completely self isolate, but I'm not mixing with people so am humouring myself dreaming of this holiday )

We have a couple of vegetarians and one vegan in the group. The vegan friend is quite relaxed about things like bread, and pasta, he tends not to investigate too closely as long as it's not got 'egg pasta' iin big letters on the pack (his words!).
Vegan friend has said he will sort out sourcing vegan milk, cheese , mayo etc - we're probably going to Spain and seems the supermarkets there are pretty good for plant based products.
We'll eat at least one meal out each day but have agreed to spend a reasonable amount on accommodation so we have a nice space to chill out and just be together so will possibly have lunch or evening meal there most days

We will hopefully have a barbecue (I'll buy some disposables for vegan/veg food to keep it separate)
I know everyone's dietary requirements well as we spend a lot of time together, basically just need to provide a vegan option and everyone will be happy.

Ideas so far which are quick, easy, require minimal store cupboard ingredients, and can be easily adapted to suit everyone;

Mezze (olives, humus, roast peppers, jar of artichokes. Vegan cheese if available. Separate meat and cheese platter.)

Pizza using naan bread as bases & variety of toppings

Pasta dish with tomato sauce and Mediterranean veg; with some sort of meat for those who eat it

A salad buffet with a variety of options including eg chicken wings

Stir fries

Barbecues - I have plenty of go-tos for meat eaters but less so vegan/vegetarian where I usually make some sort of vegetable kebabs eg courgette, mushrooms, onions, or bbq sweetcorn - but would welcome some additional ideas

Also when we've been self catering, I've done thjngs like steak or salmon or which cook really quickly and serve with new potatoes & salad. Ideas for plant based alternatives welcome. (Vegan friend has said he will look in the supermarkets for ready made options to make it easier, but I'd like to go armed with some ideas for things I could cook from scratch for him too.)

Any other ideas along the lines of the above please? (Either specific dishes or general ideas? )

The easiest thing to do is think about cultures that traditionally don’t use a lot of dairy eg North African or Chinese. Then I would do a plant based main dish with the meat and veggie options on the side.

So maybe
Couscous with a vegetable raging then bbq’d meats and halloumi on the side

Or veg stirfry with the protein in the side.

Fahjitas - vegan can miss out the sour cream, meat can be seperate etc etc

Curry using a curry paste rather than a variety of spices.

Soup? Although it might be a bit hot for that.

Re vegetable raging - I'd be raging too, if I found myself being chopped up and put on a BBQ!

Ha ha you know I didn't even notice that! Gazpacho is a great idea - I think I'm going to take a stick blender so we can make smoothies & milkshakes, good for soups and sauces too.

Not at all, I'm never happier than when feeding people, hence already planning before we've even finalised accommodation!

When self catering abroad, I pack Falafel mix and sachets of couscous as they’re light and really easy to prepare. You could serve alongside lamb meatballs and flatbreads. Maybe some humous and yogurty/cucumber dip.

Pumpkin or sweet potato can be cut into chunks, parboiled and sliced.

Make a runny tomato sauce and layer like a lasagne. Breadcrumbs on top and into the oven to finish cooking.

Serve with good feta for a salty kick. Use as a main or a side. Very forgiving. Easy to make ahead and reheat.

Pumpkin or sweet potato cubed and parboiled. Dredge in oil with a Mediterranean type spice mix. Grill or hot oven until brown.

Mix with tin of beans, salad onion, olives, pine nuts. Vinaigrette. Scatter over lettuce of some sort. Serve with feta for salt.

Last one.

Potatoes and pumpkin or sweet potato potato. Peel, cube parboil.

Sweat onion, garlic, chilli. Stir though diced tomato, thyme, cumin (/favourite spice mix). Tip in root vegetables, tin or two of Lima/butter beans (depending on how much you are cooking), some peas, frozen corn kernels. A bit of water and allow to finish cooking.

Serve with parsley over, feta on the side.

I've often looked at falafel mix. What's the end result like?

The falafel mix that I’ve linked is one of the better ones. They’re quick and easy to make, and after a bit of practice they’re better than ready-made.

I love cauliflower done on the bbq, it really brings out a nutty flavour. This is a simple but really tasty recipe.
I love the fruit and veg markets in Spain, so much delicious produce. When you’ve got ingredients that good cookings easy.
