Ideas for meal prep breakfasts

I'm truly exhausted at the moment (pregnancy insomnia, toddler with a chest infection, DH isolating from us with covid) and have food aversions to pretty much everything. It isn't as bad as it was earlier in my pregnancy so I can make myself eat almost anything - It is mostly the act of thinking about food and having prepare it when I'm already hungry.

So, I thought meal prep would be a good idea.

I've been eating a lot of yoghurt and fruit (which I literally portion out into tubs so I can just grab and eat) which is fine, but would like some variation.

Please share any ideas or things that you've found work well for breakfast meal prep, thank you!

I CANNOT AND WILL NOT EAT OVERNIGHT OATS. Normally hot porridge is fine and I used to make overnight oats then warm them up, but I can't do the texture of it in my mouth at the moment without gagging.

And I also struggle with the texture of toast atm. Not that anyone would meal prep toast, but in case anyone wonders why I don't just have a piece of toast - this is why.

Smoked salmon muffins or Red pepper and spinach muffins

Savoury flapjacks like these cheese and marmite ones or these.
Frozen yogurt bark
Granola bars
Banana or blueberry muffins.

Could you make a frittata when you are feeling ok. Then either eat cold or whack it in the microwave for a minute to warm through.

Platter of sliced ham, sliced cheese, hard boiled egg.

Dish of cottage cheese, served with sliced tomatoes & cucumber.

Puy lentil salad with cubes of feta.

I make granola and have that with yoghurt and fruit.

Jumbo oats, nuts of choice, seeds of choice mixed and coated lightly with honey. Bake for about 20/25 mins on about 160/180 depending on oven. Keep in a air tight jar and it lasts for a few weeks. Add dried fruit if required once it’s out if the oven.

Agree with homemade granola with fruit and yogurt
Baked porridge oats - can be heated in portions and eaten with Greek yogurt
Smoothies can be made/prepped night before
Scrambled tofu heated up with toast
Bircher muesli is lovely and prepped night before

Hmmm, I've been thinking about baked porridge but have avoided making it due to worrying about the texture (normal porridge is making me gag atm) - I'll give it a go as it'd be a great one to share with DS.

Thank you for the savoury suggestions! I never think to eat things like that for breakfast, but of course they'd absolutely work.

Sourdough and cheese
Microwave scrambled eggs and bread

Fruit and home made rice pudding. I
make mine very low sugar (1 tbsp) and with skimmed milk or almond milk, 100g to a litre and baked for 2 hours on low. That makes 4 or 5 good portions, served with any chopped fruit or berries.

Drop scones (scotch pancakes) can be made in advance and frozen. Just pop in toaster when needed. You can eat them with healthy things but I prefer golden syrup.
In the river cottage everyday there are a few breakfast ideas. One is a baked cheese cake

I eat mainly combinations of fruit and yoghurt and various overnight oats.

To jazz up the fruit/yoghurt, I add toasted nuts - usually hazelnut or almond pieces. Fruit selections are usually strawberry, raspberry or blackberry and sometimes passionfruit mixed in.

I also like egg muffins (basically frittata made in a muffin tin). Can be pretty simple with some cheese, peppers, spring onion, ham or bacon bits - whatever you've got really. Can be prepared the night before for the next 1-2 days.

Slow cooker full english breakfast, put mugs with beans, tomatoes, mushrooms in the slow cooker, then arrange sausage & rolls of bacon around the side, you can put a mug of beaten egg in if you like scrambled egg, put the lid on & cook on low, turn it on when you go to bed.

You can batch cook french toast in the oven and then freeze it. I reheat from frozen in a sandwhich press.

What abotu crackers and cheese?
Or if you can cope with yoghurt and fruit you could prepare 4or 5 jars and store in fridge.

Put bacon on a baking tray in the oven, in the morning switch on for 10 mins.

I often have ham and cheese, a sort of a continental breakfast. You can boil a few eggs and keep them in the fridge for a few days.

Pre order a breakfast delivery from your local cafe or McDonalds.

Other ones- egg muffins (bake night before and heat up if you prefer them warm)

Panacea reheat well- or taste nice cold. You can add banana to the mix and oats.
