DH got this deliciousness from a bakery. It looks like it should be easy to make but I'm not a baker so thought I'd ask you all!

It's a crispy coconut base with chocolate on top. However the coconut bit isn't like a macaroon which is usually soft and squishy and a bit sickly sweet which I don't like, this is just crispy browned coconut.

Any ideas? How would I bind the coconut bit?

I'd try a dry coconut ice type mixture and bake in hot oven like cookies.

Is it a florentine? The chocolate Can bé spread on thé underneath after the biscuity bit has been cooked

Maybe a bit like a flattened version of a coconut pyramid? They go golden and crunchy if you bake for 12-14 mins at 170 degrees. I guess if you flattened them you'd get all crispy and no squishy middle.

40 g icing sugar
75 g desiccated coconut
2 level teaspoons cornflour
1 egg white
