Vegetarian roast dinner ideas (not nut roast)

DD has decided to go vegetarian. Most meals have been ok so far, with things like curry and pasta dishes which are easy to make vegetarian.

What I’m struggling with are things she can have when the rest of us have a roast dinner, which isn’t a processed meat substitute.

So far we’ve established that she doesn’t like goats cheese (I enjoyed the spinach & feta parcels for lunches the following week) and that yesterday’s nut roast would have been nice if there weren’t nuts in it (another week’s lunches sorted for me!)

She only likes mushrooms if they’re chopped up small and hidden in something.

Any ideas or links to recipes, especially ones which can have portions frozen or saved for later meals would be most welcome.

Some of these sound like a faff for just one person, alongside all the other stuff to do too.

Personally, I'd either:
do veggie sausages

make some simple pasties which could be frozen and one got out each week - eg with roasted squash, onions, maybe a bit of sage / or roasted root vege and a bit of Cheddar/Marmite for umami

do a pepper stuffed with a sachet of microwave rice mixed with peas/sweetcorn/herbs and topped with cheese

Do a souped up version of Paxo, with some cooked vege mixed into it, maybe some chestnuts, and maybe smoked cheese on top

Or just have all the trimmings, as others have said.

Another one doesn't mind just vegetables with potatoes etc. I also enjoy vegetarian sausages- the bosh book has a great recipe for homemade vegan sausages.

I normally have veggie sausages
Quorn do a chicken roast - in the freezer section. Looks like a big sausage that you slice.
Veggie chicken fillets
Also you can also buy veggie haggis this time of year - they are lush

Veggie sausages. The veggies in our house rate the Richmond ones.

This is good www.jamieoliver.com/recipes/vegetables-recipes/mushroom-and-squash-vegetarian-wellington/ but an absolute multi-pan faff they way Oliver writes the recipe. No need for the spinach and stuff to be in different pans. It doesn’t taste v mushroomy.

Dd2 has Linda Mcartney sausages when we have a roast. DD1 does herself something like roast cauliflower, or stuffed squash, or marinated tofu, or if she cant be bothered i just do her extra roast veg.

I really hate it when the vegetarian option is some god awful tart or stuffed pepper.

Just do a roast minus the meat.
The meat is one part of a meal which is primarily plant based - 2/3 types of veg plus parsnips plus roasties plus mash plus Yorkshire puds then there’s optional extras like cauliflower cheese and red cabbage etc.
all you’re doing is taking one small piece out of the meal.

Assuming they enjoy all the other aspects of a roast then there’s no need to worry about replacing it - that’s how I feel personally as a veggie anyway.

Just make sure all your options are veggie friendly (not duck fat / veggie gravy etc)

Definitely don't agree with ohpulltheotherone below. I would be very fed up with a pile of veg alone for dinner.

I came across this the other day and will be trying it out. I would make an onion or mushroom gravy to go with it.

Deliciously Ella has a brilliant mushroom wellington dish. I also am happy with a large field mushroom with pesto and goats cheese (easy) with all the roast veg. I'm not a nut roast fan either.

Hi @Barbeasty I'm a vegetarian and I'm also not keen on meat substitutes (occasionally I have some Quorn but that's maybe once a month!) DH eats meat so when I do a roast I tend to do something like a cauliflower and broccoli cheese as a side for him and my "main", other than that I just enjoy the rest of the veggies!

My top tip is Asda own brand vegetable gravy, I've used it for years and massively prefer it to any of the other brands, it doesn't have the strange aftertaste and mouthfeel of some others 👍🏼 I tend to make it using water from the cooking the vegetables (get those vitamins!) and also add a sprinkle of dry stuffing mix, gives it a bit of body and extra flavour 👍🏼

Not every vegetarian wants a substitute for meat, I personally don't enjoy the texture, so don't feel worried that your daughter isn't keen. As long as she's getting a good mix of vegetables, proteins and carbs she'll be absolutely fine!
