Add some fresh coriander and make a salsa? Then can use with any leftover crimbo meat in tortillas.

Oh, yes - salsa. Chop the onion finely, add the coriander, a squeeze of lime juice and a wee bit of olive oil and eat in tortillas as suggested.

or you could liquidise it to make a sort of bbq sauce for ribs and wings?

Might be posting too late but would Nigella's finger-lickin pork ribs be any good for you??? They are marinaded overnight in plastic bag in pineapple juice with onions and chilli + other ingreds. (Recipe will still work with fruit of pineapple rather than juice as both contain an enzyme which tenderises meat. You could just add a bit more liquid such as lime/apple or orange juice to recipe if you wanted.) It's dead easy and always works every time even when I vary ingreds.

This is rough recipe (not at home so cannot check).

Basically bung pork ribs (approx 8 pork ribs per person if I recall rightly) chopped onions, chopped chillis, star anise (if you have any around - I didn't when I made it) finely shredded ginger, and a cinnamon stick broken in to bits, in to a large plastic bag.

Mix a couple of tablespoons of groundnut oil, pineapple juice (you have actual fruit which will be fine) soy sauce and some black treacle or molasses, some lime zest and lime juice together in a small bowl or cup and add to other ingredients in bag. Tie off neck off bag and squidge ingredients together for a bit.

Marinade overnight in fridge and then cook in baking tray in oven for 1 hour at about 6/2OO°c. Turn half way through cooking Serve with baked spuds or rice and a salad. Voila!

I ended up doing MrsCarrots 1st recipe and it was rather lovely.

Now what to do with about 5kgs of red onions....???

Make red onion jam, maybe. Slice them really thinly then cook very very slowly with butter and a bit of sugar until they're falling apart and golden (not browned iykwim). I've only made this with yellow onions, but think it'd be lovely with red, too.

Sweet and Sour sauce. Ketchup, Orange Juice, vinigar (white preferably) and pineapple chunks. Add to pan and simmer, taste and adjust for balance of sweet and sour.
