Batch cooking

I'm wanting to start batch cooking (never done so any help would be appreciated) Me and dh both work nights so need food that I can make and then freeze into individual portions to be microwaved when needed.
Does anyone have any recommendations for recipes that work well?

What do you normally like to eat? Most things can be frozen or at least stored a few days in the fridge and reheated.
I usually make meatballs, Bolognese, chilli and soups. I also freeze cooked, shredded chicken for stir fries.

I think we've over done it on the tomato based stuff like meatballs spaghetti etc I'm just stuck on things that reheat well in a microwave

The basics like chili, curry, bolognese sauce, lasagne, soups, etc freeze really well but honestly most things work IME - the best thing you can do is cook what you actually like to eat. The best tip I ever got was to refrigerate the meals for 24hrs before freezing (and always make sure they're properly cooled before storing in the fridge) as it reduces freezer burn, which in turn makes the food taste better and look more appetising.

My freezer is full of stews/casserole/chili type meals (I tend to try and make them different each time so it doesn't get boring, e.g. adding different spices/herbs/veg/beans/meat) and I freeze in different sized containers 1) big aka for whole family 2) medium aka single serve portion 3) half portion for sticking on top of a jacket potato

I'm not very good at following recipes so can't really suggest any, but variety is key to not getting bored and leaving food to fester in the freezer for years

Casserole and mash
Mac n cheese
Risotto

Pasta and risotto I would cook al dente as after a few mins in microwave they can come out a bit over cooked

Most soups freeze really well, portion individually and they don’t take long to cook from frozen in the microwave.
Lasagne - veggie or meat version.
Any casserole
Chicken curry

The other alternative is to meal prep and freeze so can cook easier without the prep on the day - cut chicken and peppers up, season and put in freezer bag ready to defrost snd cook.

Start slowly so you don't get overwhelmed
Make double of a couple of things each week. Over 6 weeks you'll find a routine.

Beef stew. I cook 4lb of stew meat with carrots, parsnips, onions in a slow cooker and I put in a family sized pack of oxtail soup for 6-8 hours on low

Always turns out lovely. Then just serve with baby potatoes that only take 10 mins to boil that evening.

Most one pot type meals either freeze well or last a few days in the fridge.
