Chicken breast V thigh

I don't eat chicken, but do cook it often for family. I tend to use breast, but thigh is much cheaper.

So what do I need to know? Bone in or out? Skin on or off? How long to cook and best recipes.

I also have friends coming for dinner soon, so thinking chicken cooked in wine or Marsala and finished with cream. Would this work better with thigh or breast?

Thigh! So much more flavour and such a nicer texture. Once you go thigh you won’t go back!

Thigh is much more forgiving - whereas breast can overcook in an instant. Long, slow and low cooking is best for thigh.

If I was cooking in a sauce I’d take skin off and leave bone in. Before serving I’d whip the big bone out (you’ll know it’s cooked once bone slides out effortlessly) but warn there may be smaller bones left behind when you serve it. You’d need 2-3 thighs per person.

Ooo, thank you. I would have served one thigh per person BlushAlso good to know about the bone as dh is weird about bones. Happy for his veggie wife to remove them though Hmm

I use thigh fillets majority of the time much nice imo kids prefer breast for certain things though

Lovely chopped up in things like curries or casseroles

As an aside - must be so hard and strange to cook something regularly you don’t eat! I’d struggle not knowing how it turned out

Bone in gives better flavour but I often use fillets too. A roasted thigh with skin on is nice for a midweek supper.
Not so good if you are cooking something quickly though, can be a bit chewy.

I prefer thighs too. Much tastier but I do cook with breasts. I prepare them by stuffing with cheese ( cheddar, feta, mozzarella), then wrapping in either bacon, fancy ham etc then season accordingly. So if I'm going for Italian style I'd use oregano, hunter's chicken a bbq sauce perhaps. I love cooking and preparing for the week. I wrap them in tin foil and keep in the fridge. I serve with mini roast or wedges or if I'm trying to lose weight, a feta salad.

Thigh has a better taste and less dry, bone in in curries or tray bakes(for us anyway) although this increases the cooking time in our old oven.

Skin on for tray bakes, skin off for curries. Crispy skin is yummy, we don't like soggy skin here.

Bone removed and diced for recipes like a stew or something.

Breast can look more posh for a dinner party I think?

That's just what works for us xx

One thigh per person isn't much. They have less meat on them because of the bone so I'd always serve two.

I've been cooking meat for so long so not hard, but I do tend to stick to what I know. For me cooking is about using all the senses, not just taste. I sometimes make a sauce, curry for example, taste and then add the chicken.

I use both breast and thigh, depending on the recipe. I buy thighs with the bone in if I'm planning on roasting them or using them for a tray bake, but buy boned and skinned for things like casseroles and curries, as I'm lazy.

I like chicken breasts hammered a little flat, spread with a mix of pesto and soft cheese and then baked in the oven till cooked. Line your pan with foil or baking paper so the "sauce" doesn't burn on. The coating keeps the meat from drying out. Lovely!

I usually use thighs. I do a lot of casseroles and traybake and just use them with bone in and skin on. I use breast for fajitas but thats it.
I love chicken thighs - much better flavour.

I prefer thigh. I find they have more flavour. I buy them skin on with the bone and then depending on dish I may remove the skin and or bone. If it remove the skin I bake it till very crisp and crumble it on dishes. Bones I tend to freeze and them make stock. I find chicken breasts a lot less flavoursome
