I have 250g of pork mince to use up - recipes please!

I bought a 500g packet of pork mince earlier this week and only needed half of it, so the rest of it is still in the fridge, use by date a few days away but as I have opened it I'd like to use by tonight.

It's for 4 of us, 2 kids and 2 adults. No allergies. Would be grateful for some recipes. Not keen on Mexican food like tacos, but will eat anything else.

Depends on what you’ve got and whether or not you want to buy anything, but I’d be looking at:

Pork meatballs in goulash sauce. Serve with rice, potatoes or tagliatelle.

Thai larb wrapped in lettuce, with rice/soup/stir fry on the side.

Pork meatballs in tomato sauce with fennel seeds, olives and aubergine. Serve with pasta.

Or maybe egg pancakes. With Japanese or Korean aromatics.

There is a gorgeous recipe for a pork chow mein type thing on bbc good food that uses pork mince. It's amazing! Will find a link

I make a very quick pork with garlic and ginger. Literally soften a finely chopped onion, add garlic, grated ginger pork and grated carrot and a little stock. Cook for 10 mins and add soy sauce. Serve with rice and chopped spring onions.

I do something similar to this but add peas or broccoli, sesame oil and Chinese five spice too.

Itsu have a brilliant recipe for chilli pork and noodles. Really simple too.
Minced pork/spring onions/noodles, garlic, chopped chilli, oyster sauce, fish sauce, soy sauce

I love minced pork in a stir fry.

I cooked a 500g pack off on Wednesday, with garlic and seasoning. Half went in with a pad Thai kit that needed using and the other half will go into a pasta sauce, tonight.

I prefer pork mince to beef because it takes so much less cooking and is much tastier.
