oh veggies, veggies, veggies .. come and help me adjust a new year's day menu

having a couple of families round (kids and adults) for a relaxing day ... think mooching

was considering a big cranberry glazed ham, with horseradish mash and red cabbage and apple .. a kind of dig-in hearty meal

now if I invite another family I'd rather like to I have I'd have to think of something that can replace the ham for the veggies .. anything spring to mind that would work with the mash and cabbage? (that isn't a nut loaf)

I'm now thinking if I invite the family with the veggie I should invite another family of veggies to make it worthwhile but think that would tip mooching day over into party .. which it's not supposed to be .. arrghghhhh

I have a lovely veggie pate en croute recipe.

Cashews and tomatoes. Would work with your mash and veg

how about a vegetable wellington? That would go with all the other stuff

My SIL made a Quorn welllington for xmas dinner which you may or not find interesting.

I ususlly do some sort of pie as it goes with all the other stuff and you can prepare it before hand

How veggie are the veggies?

You could dish out a quiche, if they eat eggs. Or a veggie chilli, or some kind of bean stew?

And mash and cabbage means bubble and squeak to me.....mmmm...bubble and squeeaak....

do you have any good recipes? or should I do a bung it (raids fridge in mind, spinach, ricotta, halloumi .. no veg cos they've all just gone in the turkey curry .. bugger)

spinach ricotta in filo pastry would be good - think you would need an egg to bind it all together and some nutmeg

This is a total doddle and really tasty.

Cashew nut and tomato pate on croute

2tbsps oilive oil
Large onion finely chopped
2 cloves garlic chopped
Can of tomatoes
12 sundried tomatoes in oli, chopped
200g cashews blitzed in food processor
rind of half a lemon grated
1 egg
1tbsp fresh basil
250g puff pastry

Heat oven to 180.
Butter and line a loaf tin with greaseproof
Fry onion and garlic for 5 mins
Add tomatoes and cook for another 5 mins
remove from heat and stir in the rest of the ingredients (except puff pastry!)
Season, then spoon into tin and bake until centre is firm to touch. let it cool (You can do this the day before and leave in fridge)

Place pate loaf on a rolled out piece of pastry, cover over with another (ie so pastry in completely round the pate). Brush with egg. I use two sheets of ready rolled puff.

Bake until pasty is crisp and puffed up (25-30 mins)

I did a curried lentil thing which also has spinach and feta in - sounds a bit but is actually very nice! Could post the recipe if you like
