I've decided to try out a brand new recipe every week this year. I seem to make the same things on rotation all the time, so hope this will drag me out of my recipe rut and improve my not great cooking skills!

Would anyone like to join me?

Made* a very pared back version of this for dinner furikake salmon* very nice, didn't do the vegetables apart from spring onions as I was trying to use things we had. Really tasty and a definite do again

Pistachio, pea and mint soba noodles - Meera Sodha (East)
I thought I would love this based on the ingredients but it was a solid ok for me. I found it way too heavy on the lime, and even though I could fix that, I just didn’t like the dish enough to try again.

Inspiration from the YouTube videos below and my favourite Youtube cooking channel, Imamu Room. Basically sandwiches with rice instead of bread and wrapped in nori. I had a tofu katsu and a tamagoyaki one, and my meat eating husband had one with bulgogi steak, and one with bacon. Delicious, simple to wrap when you have the hang of it. Would definitely make again, super versatile and an alternative to bread sandwiches which I don’t like.

Crispy oven fries - Ethan Chlebowski
Wasn’t sure if to include these here, but as I’ve just eaten them and loved them, I’ll add them anyway. I love his sweet potato fries but never tried these before but I definitely will again. The parboiled fries are really easy to handle and they're the best oven fries I’ve had (though still not as good as proper deep fried ones).

Recent new additions that I've made - Thomasina Miers esquites - have searched online for her recipe but no joy. Basically, Mexican sweetcorn soup with soured cream, feta (or Lancashire cheese) and totopos - soooooo good!

Also from Crave by Ed Smith (on social media as Rocketandsquash) - made his chicken laab (no recipe link but you can see a photo of it on his twitter feed from 11/06/2021. Again super good

Thai Green Curry Chicken Noodles, Marions Kitchen
I changed the veggies based on personal preference to aubergine (pre-fried so they were soft) and mange tout. This was a lovely simple recipe that tasted great. DH is a big lover of Thai green curry, so this recipe will be making a regular appearance in our household.

Warm, Gooey, Skillet Cookie, Cupcake Jemma
Fancied a single serve treat while DH was away and tried this, I don’t own a cast iron skillet so just used a ceramic dish. I added a little white miso and used white chocolate, it was really lovely, though very big for a single serve so probably best between two.

Black rice congee - Meera Sodha, East
I was worried that this would be very bland, but though it wasn't a favour explosion, the base of garlic and mushrooms, along with the splash of soy sauce meant I really enjoyed this. The rice still had some bite after two hours of cooking, so maybe I didn't buy the same rice type as Meera but that didn't bother me. I used spring onions and a boiled egg as well as the radishes and the toppings on top of the black rice look gorgeous.

Creamy mushroom croquette - Spain on a Fork
Fully expected to love this and I did. Loved the flavour and texture and it was really easy to make, especially making the béchamel mixture the day before.

I’m going on holiday for a couple of weeks so thought I would do a bumper week before I went.

Horchata
I am a rice fanatic and Horchata is difficult to find, even in good Mexican restaurants, in the UK. Making it was so simple and the outcome so delicious.

Spiced and Fried Haddock with Broccoli Purée, Nigella Lawson, Simply Nigella
This was full of flavour yet simple and fresh. I’m not the sort of girl who has a meal without carbs so I added some potatoes to complete it. I’m often on the look out for good fish dishes as I don’t eat it enough, this worked wonderfully and I will make again.

Ondwa, Meera Sodha, Made in India
I have never had Ondwa before so wasn’t sure what the end product should be, I feel I followed the recipe pretty accurately but ultimately I didn’t really enjoy it. The texture felt stodgy, not sure if that’s how Ondwa is or as a result of all the veg in the mix (which was a lot) weighing it down and seeping excess liquid into the batter. Won’t being trying this again, but would be curious to try a proper Ondwa from a Gujarati household to see how it should be.

Maharanis Favourite, Meera Sodha, Made in India
This was amazing, I love Indian lamb dishes and this was incredible. Extra points for being low effort and hands-off, and for it reheating really well the next day.

Maharajas Rice, Meera Sodha, Fresh India
I really liked this, is felt luxurious and tasted lovely. Next time I would reduce the dried fruit slightly, as a kid I completely objected to any sweet with savoury, I have thawed as an adult but can still be picky with it. (it paired really nicely with the above lamb dish)

Oven-Cooked Chicken Shawarma, Nigella Lawson, Simply Nigella
I served with homemade flatbreads, lime pickled shallots, rocket, and the two recipes below which Nigella recommends as accompaniments (I didn’t make the sauce in the recipe linked above as I felt one yogurt sauce was enough). Before making I saw this article by Felicity Cloake and copied her cooking method. Loved this, it was healthy, vibrant, and filling, a perfect weekday meal.

Caramelised Garlic Yogurt Sauce, Nigella Lawson, Simply Nigella
Loved this, will make again for sure, almost seems too easy to count as a recipe but Nigella does so I will too.

Quick Pickled Carrots, Nigella Lawson, Simply Nigella
I’m not a fan of vinegar at all, I find it too strong and acidic, but we had some carrots that needing using before holiday and the recipe was straightforward so why not? I surprised myself by really quite liking these, DH loved them, they definitely added vibrance and crunch to the meal which it would have missed otherwise.

Charred red pepper sauce with omelette noodles, Ixta Belfrage (Mezcla)
Thanks to @myrtleWilson for all the insight on Mezcla 😊 I was totally sold on it from what you said and looking online, then I was at a friend’s house and they had a copy and I flicked through and I need this book! It had me at the introduction when it said that all liquids greater than a tablespoon or so would be measured in grams!!
I snapped this recipe and it didn’t disappoint. I was nervous the day of making it that the omelette noodles would be a bit of a flop, but it wasn't at all and the recipe was surprisingly simple to prepare and delicious. The sauce was rich and the 50 twists of back pepper it called for weren't too much at all. Great for my husband to doesn’t eat gluten too. Will definitely make this again.

Barbecue beans and corn fritters, Meera Sodha
I tried this with some trepidation as I’ve never managed to make corn fritters that were anything other than a disappointment, but this recipe worked for me! The batter was so scant that they were almost falling apart, but they were light and crisp. I’d make this again, but the bean recipe would need some tweaks, as I found them far too sweet, especially when paired with sweetcorn.

Japanese Corn Rice
This a recipe I had no doubts that I was enjoy though I surprised my self by favouring the version with less soy and butter. Simple and delicious.

Not strictly a new recipe as I have made it once before but tonight we had Ixta's parpadelle with chipotle and pancetta sauce.

For 4 people : you blitz in food processor - 2 1/2 teaspoons of chipotle flakes, 100g pancetta, 1/2 teaspoon of cumin, 1/4 teaspoon of chilli flakes, 100g tomato puree, 1/2 small onion, 4 garlic cloves, 1 1/2 teaspoons of salt, 50 grinds of black pepper 75g olive oil.

Mix till it is like a rough mash then cook out for about 5 mins until bubbling and spitting, turn down and cook for another 3 mins then turn off heat.

Cook pasta, take a mugful of water before draining, toss pasta into sauce mix and add water.

Really delicious and super easy

Mushroom keema inspired shepherds pie
Using this recipe for the aloo masala mash and this recipe for the mushroom keema. Served with the tandoori broccoli upthread (which has been one of my hits of the year) and coriander chutney. It was good, though both parts need tweaks to perfect, which I thought they would. The smokiness of the tofu added depth to the keema without overpowering it. It was huge though. Maybe about 10 servings, and I expected about 6 so was a little overwhelmed!

I know I must seem like I'm on commission for mezcla - am not but am very much enjoying the book. Last night I made cheesy polenta with curried caramelised onions and had them with some sausages that needed using. I was unsure how this would work and DH was even more cynical. However, it was lovely and very easy to do - frying the onions took longer than she suggested but that was entirely down to me not being able to find the sweet gas spot that didn't burn them but didn't cook them too slowly - so slowly they were cooked!

Mushroom and Pea Kheema, Meera Sodha, Fresh India
Only realised on the day of cooking that this is a different Meera mushroom kheema to the one mentioned above! Delicious for mushroom fans and came together very easily, DH loved it. My one criticism is that it made too much, I have had this with other vegetable heavy Meera recipes, it’s almost like she doesn’t trust them to fill you up.

Ladi Pav (eggless soft dinner rolls)
I did my usual yeasted bread method of following the recipe but doing the first proof in the fridge overnight, so that on the day I only need to shape + second poof + bake. The dough was simple but I found it needed way more flour to bring together into a soft and yet malleable dough, maybe my conversation to g and ml from cups was off, initially it was more like a thick, stretchy, lava-like batter! They came out a little dense, almost certainly my fault as I don’t think I gave them enough time for their second proof (slightly jet lagged so not fully focused) but the crumb was soft and flavour nice, worked really well with the kheema.

@myrtleWilson cheesy polenta with curried caramelised onions sounds like the perfect dish to challenge my polenta scepticism.

Thai style pineapple fried rice - Meera Sodha
Really enjoyed this, I had some major doubts when adding the curry powder, soy sauce and stir-fry sauce (mostly chose this recipe as I have a bottle which will just sit at the back of the cupboard unless I actively try to use it) but it came together well. It was spicy and fresh. I probably would sub green beans for sugar snaps or mangetout if I made it again.

Leek, mushroom, and kale subji - Meer Sodha, East
I really only picked this recipe to use up some leftover mushrooms and I wasn’t convinced how good it would be, but it was really delicious. The leeks were the star for me. The mushrooms and kale could be easily subbed out for whatever you have, but the leeks provide such a lovely favour and slight sweetness. In contrast to other Meera recipes, I though the quantities of this were ok (using my four leftover chestnut mushrooms rather than the amount Meera suggested). Served with flatbread and yogurt. I’d definitely make it again.

Chilli crisp - Marion’s Kitchen
This is one that I knew I’d love and I did. Made with MSG rather than chicken stock as I’m veggie and happy to use MSG at home. I tried on the day of making rather than waiting because I'm patient and it was still delicious. A word of warning to anyone with sensitive eyes, nose and lungs: the chilli fumes from the food processor are HOT! Be prepared cough, sneeze and have fresh air at the ready!!

African sweet potato soup - Angela Nilsen
Soup season is here for me! I made this on a morning where I had slept badly so didn’t bother sautéing anything and threw everything in the soup maker raw and it was still lovely and comforting. Would definitely make again.

Brown loaf - BBC Good Food
I fancied some wholemeal bread, which I’ve never made before so tried this recipe. I used 200g of white flour instead of 100g to make it easier to work with and a generic bag of mixed seeds. It rose well and had a nice texture, though I think it needed more salt (and in fairness, I think I undershot the recipe suggestion) and maybe something malty to make it really nice. But I would use this recipe as a starting point.

So many good recipes coming through!

Tonight I had lamb chops with wilted kale and cacio e Pepe beans from Crave (rocketandsquash on social media). So good!. I slow roasted the lamb chops a la Nigella and then popped a can of haricot bean in the pan with 200ml of water, slowly simmered to loosen up the beans, added butter and pepper, emulsified then added parmesan cheese - tasted delicious. Definitely sold on cacio. e Pepe beans for other roasted meats - chicken thighs, pork chops etc

I've menu planned for this week already, and already try to use one of my many recipe books and stick with it all week, to actually use them rather than they sit accusingly on the shelf gathering dust. Or a website I've browsed. This week is the Tesco website so nothing massively inspirational to post but uses items I already have rather than buy more.

Absolutely love some of the recipes posted! The Leek, mushroom, kale subji sounds incredible!

I'm going to spend a happy hour scrolling this thread and hopefully post some of my own experiences in the coming weeks!

I’m a little late to the party but would love to join!

i have lots of cookbooks which have been gathering dust as I had my first baby 10 weeks ago. I’m starting to get back into the swing of cooking and always try her recipes. This year we’re trying to eat more veggie/vegan meals and so began my love affair with Anna Jones!

Tonight I tried a new recipe annajones.co.uk/recipe/quick-squash-lasagne. Overall it was a success. I had some gruyere that needed using so added it to each layer with the mozzarella and I’m pleased I did!

I'd also like to join, I try and do at least one new recipe a week although nothing like as adventurous as above. We always eat with DC, so have to manage around their dislike of anything spicey, too unusual or a lot of vegetables.

I got an airfryer last week, so this weekend's new recipes were several attempts at airfryer chips and then airfryer doughnuts. 3 goes in and we've concluded essentially this recipe gives us the perfect chips for us www.slimmingeats.com/blog/how-to-cook-the-perfect-baked-oven-fries .
