I've decided to try out a brand new recipe every week this year. I seem to make the same things on rotation all the time, so hope this will drag me out of my recipe rut and improve my not great cooking skills!

Would anyone like to join me?

My first foray into Korean food, but not the last. Much easier than I thought, simple in fact, an easy mid week recipe if you have the ingredients. An unusual sweet/sour/spicy combination that worked wonderfully for us. I'd expected leftovers but DS devoured two portions at least. 😁

Made the miso butter butternut gnocchi much talked about on this thread. Would definitely make again. Needs more of the salsa. Mind you I did mine with very finely diced cherry tomatoes so it probably had more texture than it was supposed to. I didn't mind a bit of texture though otherwise it's all soft soft soft

Definitely needs the yogurt as it's very dry. Could also use more tomatoes.

In fairness to Jamie I used a red chilli not two green ones and no ground almonds but I thought the paste was a bit unbalanced and on the bitter side.

Courgette and halloumi fritters with chilli and mint jam - Anna Jones, One: Pot, Pan, Planet
I have to admit that I accidentally burnt the jam beyond salvation because I ended up getting distracted, but the rest of it was good. I liked that the moisture from the courgette was used to help make fritter because I hate squeezing excess moisture out of vegetables. I’ll definitely make again, hopefully with the sauce next time (which was tasting good before).

Forbidden rice salad with blistered tenderstem and miso dressing - Meera Sodha, East
I liked this, though served it in the same week as the Ottolenghi peanut miso chickpea salad, which I much prefer. Still a nice recipe, and possibly one I’ll keep in mind for very hot weather when I don’t want the oven on.

Aubergine and cherry tomato curry - Made in India, Meera Sodha
I’ve had this book since 2016 and find it almost impossible that I haven’t made this recipe before but I can’t remember making it! I did roast the aubergine beforehand, as I love a silky aubergine texture. I loved it. It was a little rich, lovely acidity from the tomatoes, and aubergine is always a huge hit with me. Not much else to say other than it was totally delicious!

I’ve never cooked anything lamb before, and was quite intimidated, but it was an easy recipe to follow. I didn’t eat it, but everyone seemed to enjoy it and didn’t leave it on their plate, so that’s a bonus!

two new ones from me

First upMezcla's brown butter cornbread
This comes from the entertaining section of the book and whilst the recipe looks long- about 98% of the ingredients are blitzed in the food processor so its more of a prep and assemble job and then bung in the oven as oppposed to fiddly cooking.
I absolutely loved this - it smells so good coming out of the oven and has a good balance of flavours - the heat of the habanero balancing out the sweetness of the corn and maple syrup (I did reduce the syrup content a bit as i don't think my tooth is as sweet as Ixta's!) There is greek yoghurt in the cornbread too which whilst you can't taste it, am sure it gives some sour notes! Recipe serves 6 and she says it goes very well with mole or the chicken curry in the book. However, as I'm try to eat more vegetarian dishes, I went down a sort of cowboy theme with home made baked beans...

I used Joe Woodhouse's Baked beans in sherried tomato sauce. I used canned rather than dried to save time and again whilst there are 3 different stages of cooking, its all pretty much sorts itself out on the hob and our old friend the food processor comes to play too. Really enjoyed these and they matched well with the cornbread. I've never been a fan of baked beans (the tinned variety) - perhaps the sauce doesn't work for me but I really enjoyed this tangier sherry vinegar version. My sauce wasn't as loose as his but am not sure it was a huge deficit..

Will definitely make these again (in fact we're eating the leftovers of both tonight - a no cook night!)

Perfect Paella, Felicity Cloake, The Guardian
I used only squid and monkfish for the fish/seafood items, and I skipped the stock pimping but otherwise followed the recipe faithfully. I was a pretty apprehensive as paella is daunting - properly cooked fish/seafood, rice that is cooked through yet not water-logged with a delightful crust and also not burnt, aromatics that enhance without overtaking… I was so pleased with how it turned out, and DH loved it, the process was actually pretty easy so I can see me doing this again.

Bittersweet Cocoa Granita, Alexina Anatole, Kitchen Projects
This caught my eye when the recipe was originally shared a month ago, but the recent arrival of summer meant this was the perfect time to give it a go. So simple to make with a minimal ingredients list, an absolute winner. She gives two serving suggestions the first being flaky salt and a drizzle of olive oil, the second is vanilla chantilly cream and passion fruit, both are terrific and bring out different characteristics.

Tinga Poblana, Ethan Chlebowski - UPDATE
I took some of this out of the freezer for some simple quesadilla served with pico de Gallo. Delicious meal that came together in less than 15 minutes, exactly what I wanted, thank you past me.

I've been trying to up my tofu game for a while: these two recipes are absolute winners:

Vegan 'salmon'- this will be my go-to for anyone who says they don't like tofu

Indonesian Coconut Rice, Crispy Chilli Tofu and Peanut Sambal- I add a spalsh more water to the rice because I am using brown basmati. I used runner beans rather than green beans which worked just as well.

Also made coconut prawns with a chilli lime mayo - also going on my rotation list.

Made Mary Berry’s aubergine caponata yesterday - really delicious! I served it cold on some Greek yoghurt that I’d topped with lemon zest. Will definitely make again, would work as a nice bbq side.

Today as a treat for Father’s Day I made Bundtnuts with a passion fruit glaze. The recipe was from an exciting new book called Bundt by Melanie Johnson. I have a number of Bundt tins which had sat in my cupboard for a long time (!) as I wasn’t inspired. This book has changed that, not only can you make cakes but ice cream and, terrines and trifle in them!
These little Bundtnuts were delicious, I’ll keep marking pages in the book and try something different again soon.
PS I bought some PME cake release spray and it worked brilliantly in releasing these like gems.

Vegetable Gratin - Balkan Style, Olia Hercules
Months after requesting the recipe from @myrtleWilson , I finally got around to making it. Delicious way to use summer vegetables, and adding feta to anything is always up my street. It felt indulgent without feeling heavy. Thanks for sharing the recipe

Glad you enjoyed it @toastofthetown ! How apt that I follow you with an Olia recipe with this delicious salad from her husband Joe Woodhouse.

It is so simple and quick to prepare and I always feel a tomato salad takes me to Spain or Italy! This online version says to soak halloumi in water which he doesn't in the book version (book says to cut block of halloumi in half then fry 2/3 mins a side and then slice - I liked this approach as less chance of halloumi falling apart). I read on his insta that the rationale for a 20 min soak is that it reduces salt level a bit and you get bouncier less squeaky cheese - I hope someone on here may test it out and report back! I had a bowlful of red, yellow and green tomatoes from the grocers that ripened up nicely over the last week and were perfect and tomatoey

Keralan Squid Coconut Fry, Chill and Mint
This was amazing, I love South India flavours so I knew this would be a hit. However, it was hot, my mistake as I don’t have dried Kashmiri chillis so substituted with dried red chillis I have in which I think were a fair bit hotter. I will make again for sure, both with squid and with other meats, fish, and vegetables.

Tonight I made an aubergine curry from Ottolenghi Aubergine curry It was amazing! Reminded me of Diana Henry's Goan Fish Curry which I also love. The sourness doesn't come from tamarind as DH's recipes does but from lime juice but also we didn't have enough garam masala so I added chaat masala too which has a sour base.

Its a bit more fiddly than other recipes I've shared recently - no Mezcla food processor! But not at all stressful. I made the full recipe for 4 and have half stashed in the fridge for Thursday night!

One Pot Honey Soy Chicken & Rice, Marions Kitchen
This one didn’t really work for me sadly, flavours were good but the texture of the rice was gluey and unpleasant. Might be my own fault for the following reasons: I thought I had jasmine rice in, I didn’t, so substituted with basmati. I didn’t wash or soak the rice in advance, something I normally always do, but the recipe doesn’t say to do so here, maybe you don’t need to with jasmine? I don’t have a smallish cast iron dish so used my lidded wok. Ultimately for the rice to become tender it required an extra 20 minutes after which it was stating to breakdown.

Really easy and so good. The chilli oil I have in right now is a little insipid but this would be even better with decent stuff. This will be in regular rotation.

At the weekend I adapted a Nigella Lawson recipe for Apple and Almond Cake. I really didn’t want a full cake - I was attending a family get together and felt cupcakes/muffins would be easier. This exact recipe made 18 good size muffins and were absolutely delicious, even a couple of days later. They were incredibly moist and flavoursome. On another occasion I would consider adding some frozen raspberries. I think they would bring something sharp to the muffin. They were also very easy to make and it would be easy to halve or even quarter the recipe.

Fantastic thread! I've bookmarked loads of new recipes to try. My contribution is this delicious tomato, lemon and ricotta pasta dish. You don't have to use spelt, normal spaghetti is fine. I sometimes add mushrooms, peppers and asparagus. It's a lovely, easy dish and the lemon makes it taste v fresh.

This week I made Chicken, Potato and Tomato Roast from from Meliz’s Kitchen, it was so tasty. I prepped and partially cooked the recipe and reheated later in the day due to time constraints. I would definitely make this again, it’s true home comfort food packed with delicious flavours.

I also made Oreo Ice Cream from Jane’s Patisserie, so so simple but fab. Next time, I’ll split the basic mix in two and make two different kinds. There are no raw eggs and no need for an ice cream maker.
