I've decided to try out a brand new recipe every week this year. I seem to make the same things on rotation all the time, so hope this will drag me out of my recipe rut and improve my not great cooking skills!

Late to the party, not sure how I missed such a great thread.

I made this last night https://www.tamingtwins.com/spinach-and-ricotta-lasagne-slow-cooker/. I used the oven rather than the slow cooker. And a french equivalent of the ricotta because that's what I had in.

It was lovely. DD declared it to be the best lasagna ever, which is high praise as I'm known for my lasagna.

Muhammara chickpea stew - Anna Jones One: Pot, Pan, Planet
Simple, tasty and quick to make. The sauce was rich, even though I totally missed the instruction to drizzle olive oil into the pepper paste (in my defence, the instructions in the book are wordier than the ones in the link). I had it with brown rice and the carrots below

Roasted chantenay carrots with herby green tahini, crispy shallots & dukkah
One of those recipes I knew I’d love because I love everything in it. I had a lot more of the crispy topping than in the picture, not that extra crispy shallots is ever a problem.

Vodka Gin gochujang rigatoni - Meera Soda
I realised just before cooking that the only vodka I have is caramel flavoured soswtiched to gin, and that I didn’t have the cream I thought I had, so used cream cheese and a splash of milk instead. It was nice, but not a showstopper and I prefer the miso butter greens pasta which I’ve made another three times since. I’ll probably make it again with the original recipe put of curiosity.

Cooked the Cajun Sweet Potato Hash from Doctor’s Kitchen this evening. I did mine with a poached egg instead of boiled. Lovely, although this is in the breakfast chapter and I'm not sure I could stomach that first thing in the morning.

A definite one to make again, and soon. Very easy. Lovely depth of flavour, warm but not in a chilli-type way. We served with rice. This is one of my favourite cook books ever!

I made this yesterday for DH and I, it was absolutely delicious. I did stick faithfully to the recipe, however, you could add roasted red peppers. A very quick and tasty recipe which happens to be low calorie. I did serve it with baked potatoes which was perfect.

Simple, quick and delicious. I added coriander because we have loads to use up but otherwise stuck to the recipe. We served with rice.

Portokalopita: Orange, Yoghurt and Filo Cake, Georgina Hayden, Taverna
Very simple and no real finesse required. This was delicious and fragrant, it would work really well as a dinner party or barbecue pud as it fairly low effort and benefits from being made in advance.

Crispy Oyster Mushroom Skewers with Crushed Chickpeas, Ixta Belfrage, Mezcla
This was utterly delightful and really quite quick, no surprises as the ingredients and process were obviously going to result in a dish that I loved. I used tinned rather than jarred chickpeas which meant I was around 60g short of the advised quantity, it worked perfectly fine and the overall dish was so rich that I didn’t miss them. I will be making again.

I used a pear instead of apricots due to seasonal availability. This was very reminiscent of a Yorkshire pudding and felt more like dessert than breakfast, but neither of these are bad things as far as I am concerned.

Potato, leek and chickpea traybake with quick romesco - Anna Jones One: Pot, Pan, Planet
I doubled the cooking time for this, as I figured there was no way the potatoes would cook in 25 minutes. This was a good dish, not a showstopper but so easy to make. I’d probably up the proportion of leek next time, but make that’s just because I love leek.

Foolproof pan pizza - Serious Eats
I already knew I liked the base dough recipe as I'd made the no-knead focaccia a few times now. I only have a 12 inch skillet and I didn’t realise until constructing that it was for a 1o inch skillet, but I really enjoyed the pizza, even though it was definitely thinner that the pizza pictures in the recipe. Mot of the time in this recipe is hand off, so really easy and not a lot of effort. Definitely one to make again.

Pizza sauce - Serious Eats
Really nice recipe and would also work well for pasta. I cheated and used crushed tomatoes rather than crushing myself, as I know the ones I buy from Lidl are the exact consistency I wanted. Also a pretty hands off recipe.

Glamorgan sausages - Felicity Cloake
I’m not sure if I’ve made these before, but I don’t think so, and I don't think on this thread anyway! Cheese, leek and breadcrumbs is guaranteed to be a winner for me and they were great (and very forgiving of the fact they ended up in the oven for much longer than they should have).

@SummaLuvin - apologies if you're already on board with this but Ottolenghi's portobello mushrooms with butter bean mash have a similar vibe to the Ixta recipe you posted about - very delicious and easy mid week dinner..

Did you get your goat from cabrito @AnnieKenney - our excellent local farm shop sometimes has some in and I made a slow roasted goat shoulder from Gizzi Irskine's "Slow" and then shawarma'd the leftovers - I remember both being excellent - I'll try to remember your post next time I see goat at the farm shop!

I have three new dishes on my meal plan this week so hope to update soon!

Today I made Aubergine Dumplings alla Parmigiani from Flavour by Ottolenghi, this was mainly for my vegetarian DD who loves aubergine- an absolute hit. There are a couple of elements to it and both can be made in advance and put together on the day resulting in a easy ti assemble dish. The recipe states it serves four, but to be honest it can serve 5/6 easily.
I also made Apple and Almond cake by Nigella Lawson which had the added benefit of being GF which was perfect (SIL is GF) and so easy to do - absolutely delicious. I would happily make this again whether or not I needed a GF dessert/cake.

Ottolenghi oyster mushroom tacos
I made this last night - very pleased I did too! Will definitely make a again - I love tacos and often make a decent black bean taco (Anna Jones) and love carnitas (I use Thomasina Miers) and a delicious yucatecan chicken taco that I found on some random website (I lived in the Yucatan for a year so forage out yucatecan recipes...) so pleased to have a new addition to the list with oyster mushrooms.

Not the cheapest vegetarian meal but significantly cheaper than a traditional roast lamb easter meal! I had a mix of oyster and king oyster mushrooms and in hindsight I should have sliced up the king oysters a bit more as there was a little mismatch in cooking times but nothing to get upset about. The mushrooms have the right amount of 'heft' I think you need in a taco - hard recommend.

Very easy to do (as per previous thread used unidentified dried chillis from drawer as the label had wandered off...) - praise be to the spice grinder though as it would have been a serious arm work out to pestle and mortar it...

Although I had masa harina etc in, I wasn't in the mood to make tortillas and so just used the El Paso corn tortillas which I find are pretty decent.

Tbis won’t help but the other amazing aubergine recipe I’ve made recently is from Mezcla, it’s the Cheesy roasted aubergine with salsa roja. That too was a huge hit, my daughters are huge aubergine fans.

If you are either after a very quick Indian side dish or have some potatoes/veg/paneer going spare this is a very easy and tasty dish. I’ve just made it with potatoes to put in the freezer, it would work very well with cauliflower or paneer in particular.

Someone recommended (I think on this thread) a spinach and ricotta slow cooker lasagna.

I made a couple of adjustments for what I happened to have in and used a slightly different tomato sauce I was making for something else at the same time. I also chucked it in the oven as it was on for something else. It was really easy to pull together and tasty so it will become a regular on our meal plan I think.

Looking forward to seeing all the aubergine recipes. We love aubergine and I do at least one aubergine meal a week when they’re in season.

Ottolenghi stuffed aubergines in curry and coconut dhal

Up next in the Aubergine Lovers Weekly segment of the thread....

Made this last night - was very delicious and easy to do. I did as instructed and bought the squishier paneer (usually I get the firmer one for saag paneer etc - although he says not a deal breaker if you can't get the squishier type) which did result in giving the stuffing mix a lovely light texture, however due to a shopping error my paneer stuffing didn't pack the punch it may have done because I picked up hot mango chutney rather than hot mango pickle.
The curry/coconut dhal was really lovely and baking it in the oven with the rolled up stuffed aubergines seemed to bring out the smokiness of it. So all in all excellent dish - nice combination of deep smoky dhal with light but zingy stuffed aubergines. Will definitely seek out some hot pickle and do again!
