Ideas for leftover roast beef??

Cooked a very yummy joint of silverside last night for Christmas dinner - there's about 2 portions worth left, sliced, medium rare, in my fridge.

What do I do with it? Don't fancy roast beef sandwiches - any other ideas?

Stuff them in the freezer till you fancy roast beef.
Hows about a hot roast beef sandwich, it makes a real difference.
Or slice the strips and add to a stir fry or a chinese type meal. (noodles beansprouts veg soy sauce etc.)

Slice it into slivers and make beef in black bean sauce. If you need to feed several people with it, add lots of veg and do noodles as well as rice. Or possibly an accompanying sweet & sour chicken/prawns dish.

I usually do stir-fry with left over roast beef too.

Ive got a whole cooked joint of beef in the fridge. any ideas other than stir fry or sarnies for tonights dinner? thanks.

slice and food process, freeze then use like mince, but put it in the dish towards the end (as you won't really need to cook it, just defrost it).

I made beef barley soup last night with my leftover rib roast. It was yummy.

Would you need a mincer, Aitch? I love shephereds pie.

In the end (like you're all really interested!!!) I made crispy shredded beef with fresh coriander and ginger and buckwheat noodles and green vegetables. It was great!

Translation of stovies? Or do I have to wait for my Scottish DP to get home?!

I chopped a couple of onions and a couple of cloves of garlic and sauteed that in a little olive oil and butter while I sliced lots of carrots and celery and then threw them in. Then I added the leftover bones and meat and some beef and veg stock (you can use more beef stock since you don't have bones) and seasoned with dried thyme, salt and pepper. I brought it to a boil and simmered for quite a while. Then I let it cool a bit and skimmed off the fat. I rinsed and boiled some barley for 10 minutes and then added it to the soup. A couple of hours later, we ate it and it was warming and delicious. You can add more veg if you want -- mushrooms would be lovely in it as well.

Want to add that I put the heat back on so the soup could simmer after I skimmed the fat and added the barley.

I come from Aberdeen and I would never dream of putting carrot in stovies. You usually find the recipes given are from people out side of Aberdeen. My daughters boyfriend (from London) had stovies at the pub one night when he was up on holiday and now craves them.
