Left over Turkey recipes using standard (ish) store cupboard ingredients and a few veg

Well there's your challenge....

....the more helpful recipes will include standard store cupboard ingredients (i.e things like tomato puree, stock cubes, cornflour are fine but fresh lemon grass / coconut cream etc would be taking it too far)

Hopefully this thread might prove useful to a lot of people.....

Turkey casserole:

Bits of leftoever turkey meat
Couple of carrots
An onion
Anything else desired that you happen to have
Stock cubes and cornflour or leftover gravy (want the gravy nice and thick)

Put meat and veg in oven-proof dish or slow cooker, cover with stock/gravy.

Put in oven/switch slow-cooker on low heat, leave for 3 hours (while you go to the park to play or for a nice walk), come back and serve.

Good with rice or potato. Other veg can be served on the side

Can be blitzed in blender for newly weaned babies or just pulped up a bit for older babies, depending on salt content.

Make a turkey bolognaise. Substitute the mince and beef stock with turkey and chicken cube.

Turkey beefburgers. Make a really really thick white sauce (nearly a dough), flavoured with a bit of a stock cube season well and add roughly chopped turkey. Shape into patties and freeze till stiff (or for storage), then fry till golden brown.

Bang Bang Chicken/turkey - have just remembered! Personally, I can't bear all the leftover recipes which involve creamy sauces/creme fraiche etc. Also, a bit of chili and spice is always nice after quite bland 'dinnery' foods IMO. I am looking fwd to a solitary and v hot green chicken or prawn curry in a couple of days, once I have cleared the fridge a bit!

Coronation Turkey - make a creamy sauce flavoured with curry powder and serve with rice, bread or baked potatoes.

And I adore diced turkey mixed into mayonnaise & korma powder. Cheap, lazy yet curiously addictive!

I'm just about to make a thai salad with the leftovers with lime juice, chilli, mint and coriander and cucumber and carrots. What can go wrong with that? Though green curry sounds nice also with leftover.

We've just had "Boxing Day pie": all of yesterday's leftovers (including turkey; goose; ham; stuffing; potatoes; sprouts; swede; carrots; bacon; sausage) in white sauce (white sauce + leftover bread sauce) topped with pastry. MASSIVE pie just served with peas and gravy. I have to say, I enjoyed it more than my Christmas dinner!

Just had delish pie tonight lilolilbethlehem - sounds similar to yours. Cook a couple of sliced onions in butter. Add couple of chopped bacon rashers and some chopped mushrooms. Add any left over turkey plus gravy or stock. Black pepper. Tarragon. Splash of double cream then top with puff pastry. Also made the turkey stock which is a pain in the arse but so worth it in the end. Have this pledge with myself I HAVE to do it the day after boxing today. Soup tomorrow no doubt!
