Tasty mushroom recipes for mushroom haters?

We are trying to eat more vegetarian meals and all the good stuff seems to be mushroom-based. I'm a fan but by partner hates them. I'm wondering if there might be a magic mushroom recipe that downplays them and is delicious so I can win him round?

I think if you hate mushrooms you hate mushrooms tbh! There are so many other vegetables to cook with.

Agree that if you hate mushrooms you hate mushrooms. I hate apricots. No amount of hiding them or a new recipe would work with me.

Sorry, I'm with the others, NOTHING would make me like mushrooms. Slimy, horrible food of the devil! I would use something like butternut squash for the chunkiness instead.

I made a vegetarian lasagne as I can longer eat meat, allergies to some and my body just not liking the rest. It had mushrooms in it and my kids hate mushrooms. I love them and just Will garlic some mushrooms and have it on toast. As long you chop them up really small, because of their earthy taste, it makes the food taste meaty. My kids ate it all. You can hide most veg in sauces. Even if you blitz it, so nothing can seen, it's more for the flavour and goodness that comes from it all.

I agree - you need to be asking for non-mushroom recipes, not how to force someone to eat something they don't like.

I hate mushrooms and wouldn't eat them no matter how you tried to disguise them, it's the texture as much as anything. They're like slugs.

Down with mushrooms!

I'm really keen on the Tesco Finest Beef Stroganoff with Wild Rice ready meal but have to stop and remove all the horrid mushroom bits.

These mushroom and walnut samosas from Meera Sodha are delicious. The original recipe calls for nigella seeds rather than mustard seeds, but otherwise looks the same. The mushrooms are blitzed in a food processor so if it’s a textural problem then that removed that problem.

But if he doesn’t like mushrooms then there’s plenty of other vegetarian foods. If you are looking to get into vegetarian looking and like Indian/Asian food, I can whole heartedly recommend Meera Sodha’s books Fresh India and East for plenty of delicious and mushroom free recipes. She also has a column for vegan food in the Guardian.

Yes you're all right I think, I'd better abandon the mushroom idea. Thanks for the book recommendations - I'll see if I can get inspiration from them

Mushroom and walnut ragu would fit the brief. Ikwym- mushrooms can be slimey and creamy, they’re not in this recipe.

I used to hate mushrooms. Couldn’t stand the sliminess. Liked mushroom soup when I was all blended but not when I could got any of the texture. But when I became a vegetarian so many veggie options in restaurants have mushrooms so I made myself like them. Started with portobello mushrooms because they’re less slimy and worked my way to smaller ones. Now I love them.
In terms of recipes that don’t taste mushroomy if he’s ok with flavour but not texture cream of mushroom soup is lovely. Then I agree anything where you mince them really small just adds a meaty texture with not much mushroomy flavour or texture.
this is one of my favourite things to make. My mushroom hating husband loves it. I turn the leftover into veggie sausage rolls. Added some cheddar and cranberry sauce (chutney would also be great) inside the pastry at christmas and it was amazing.
Someone suggested something like this. Delicious.

Mushrooms are foul in taste, smell, and texture. They are truly vomit inducing. Why try to force someone who has the insight to acknowledge this into consuming the devil's ingredient?

Over-salted mushrooms can be corrected by adding flour (for example, in mushroom sauces for thickening), mashed potatoes (for garnish), rice, sour cream, onions, or an additional amount mushrooms. And if it is better to fry mushrooms not separately, but a mushroom assortment - it turns out tastier this way. As for medicinal mushrooms, the same story is with them. I hate mushrooms. Have tried to like them, but I just don't. There is no meal that is going to convert me.

I love mushrooms in all their forms. On the offchance that it is a textural thing to do with whole mushrooms, and blitzed mushrooms would be OK, this is very good. Mushroom and walnut pate. itdoesnttastelikechicken.com/vegan-mushroom-walnut-pate/

Failing that, aubergines also have a 'meaty' texture. However, my impression is there as many people who loathe aubergines as there are mushroom-haters. There may even be a big overlap between the two groups!

I hate mushrooms but I am prepared to eat them if I don't notice then - so I have been happy to have button / white mushrooms chopped up small and mixed in with something with a strong flavour like a curry or alongside lentils in something like this veggie pie.

I'm veggie from infancy and I can't eat mushrooms if I feel the texture of them. I hate how they feel in my mouth but I don't mind the taste. I love mushroom soup, for example. So you need to make sure there is ONLY the taste, not the texture.

My DH doesn't like the texture of mushrooms, but doesn't mind (but doesn't love) the taste. I've found that chestnut mushrooms are a bit firmer and less slimy, and these are the ones he tolerates best. He'd still prefer no mushrooms though, so I don't really tend to cook many meals with mushrooms in.
