Synthetic cream used in cream cakes from bakery?

Does anyone know the recipe or where you can get the cream used in bakery pastries, it's not buttercream but not real cream?

Oh I remember that. Weirdly white, you could tell by looking at it.

No idea where it came from or how you could make it though.

No that’s actually cream, with air. Artificial cream was something else. Squirty cream goes flat if you leave it, this was used in cakes etc and would keep its shape like normal cream.

I haven't seen synthetic cream cakes for years! It was unpleasant stuff, almost like whipped, sweetened lard. I think it might have been called mock cream, if you're looking for a recipe.

Creme patisserie/pastry cream there are lots of recipes if you google.

It wasn't creme patissiere, it wasn't nice and is quite difficult to describe. Dream Topping but more solid.

My nan (now 101yrs) used to make it. I recall her creaming butter/sugar, then swirling hot water around the bowl. It would dissolve the sugar and somehow made it go from a yellow butter colour to white. It was used when the cake/pastry needed to kept where there wasn't refrigeration for fresh cream. I found this recipe, but I don't recall any gelatine or cornflour in my nans

I always thought the squirty cream used in cakes was real cream. Until I was rudely awakened.

I have a Mrs Beeton recipe for mock cream. It involves boiling some milk, thickening it with cornflour, then beating in some butter and sugar.

I am intrigued by the other mock cream recipes on this thread though and will give them a try

Loads of cake shops still do this. Especially old fashioned ones. Its great in donuts with the line of red sauce/jam.

My mum doesnt like cream we used to buy the long doughnuts with jam and this mock cream from sainsbury's. I loved it

I love that stuff! It's trashy but yum and can be found in cheap Swiss rolls. Yes, it's unnaturally white!
