How much veg should I prepare per person? Roughly?

Regardless of what meal I cook, I always have leftovers.

Is there a proper way of working out how much to cook, without leftovers

Any help is appreciated, because I know you're all busy

One of my favourite parts of Christmas is bubble and squeak & cold turkey/stuffing/sausages on boxing day.

I always aim to have leftovers, saves having to cook again for a couple of days.

I tend to do 4 or 5 carrot sticks, 3 broccoli florets etc per person etc.

ANd yes, any leftover potato for bubble and squeak (in fact have bought a cabbage for this very reason!).

Leftover roast potatoes are also great diced up and fried in an omelette for Boxing Day brunch. Other veggies can go in a vegetable soup.
