Goose definitely, lard poor second. Wouldn't use olive personally - but that's just preference.

i think that olive oil cancer thing is a bit of a myth.

Usually use goose fat, but have a veggie coming for lunch, so will be olive this year.

I would love to say goose fat as it seems rather fashionable but I use half butter and half white vegetable fat. I looked at tins and jars of goos fat in the supermarket and they seemed to cost £1.99 - I thought that was rather silly. I would rather spend the £1.99 on a few ounces of cubed pancetta and a few roasted chestnuts to toss through the Brussels sprouts. Olive oil is not ideal for roast potatoes imho.

duck - just personal preference

if you need something veggie, I think sunflower oil does better roasties that olive oil (and is safe to heat to higher temps)

If you don't want to use goose or duck fat then butter and sunflower oil mixed is best and I personally don't like olive oil on roasties.

according to heston blumenthal and his recipe for perfect roasties it should be olive oil. Especially if you have veggies at the meal.

Goose or duck. Definitely not olive oil which should not be cooked at high temperatures.
