I parboil and shake, heat goosefat to very hot and chuck in on a high heat. I cook my turkey overnight so that the oven is empty and I can put them in very hot

parboil just for about ten mins, fast - put them in boiling water, don't start with cold.

heat the oil in the oven until it is smoking - try putting a potato in, it should sizzle and spit.

cook at 220c.

Add plenty of salt, pepper and herbs, I add a bit of spice too.

I have the rather smug satisfaction of having already cooked xmas dinner this year.

you should be able to cook them in the 30min that your bird is resting prior to carving, so have them in a really hot oven.

Adding salt when par boiling makes a BIG difference to crispiness. Heston blumenthals tip too!!

this is waht i always do, and mine are always crispy:

Heat veggie oil for a few mins in the oven until oil is very hot

add peeled potatoes and cut up onions and shake in the tray so they are coated

i use maris piper or king edwards

whack in the oven for an hour or so

goose fat is a must, definately par boiled and 'fluffed' at the edges, in on a medium heat, then doused (sp?) in fat again and whacked on a high heat for about 10mins, works everytime!

thow them in the oil, turn them once so that they are coated in the oil then cook.

My roast potatoes are the best (honestly - it's the only thing Ican do well!!!)

All I do is simmer potatoes for about 20/25 mins (quite a long time I know but it works), then shake them.

Meanwhile put olive oil in a shallow dish in the oven. (Only about 3-4mm)

When potatoes have been boiled and shaken, put into oil, coat with a teaspoon. Then in oven for about 40 mins.

Perfect everytime!

i make mine practically every week, and i think pre-heating the oil does make a difference

get it practically smoking hot

for the turkey it's 180 so how do you do the pots at 220? think i'll follow hestons receipe as that lower

you do the bird first, then rest it for 30 mins prior to carving and turn the oven up for the roasties then while it is resting.
