Can I cook the roast potatoes tommorow, and finish them off on Christmas day?

I'm sure I read in some magazine or other I could do the roast spuds the day before, then put them back in the oven to reheat / finish browning on the day?

If you want, you could parboil, cool, freeze, then bung them into the roasting dish at a highish heat on Christmas Day.

We have done this and they are a bit more chewy / soggy than usual

I know why you want to do this, but I wouldn't advise it.

The trouble with ramming a ginormous turkey in the oven is that it creates a lot of moisture, which isn't good for the crispiness of your roast veg. Many people get exasperated at just how long their roast veg takes on Christmas day.

It's worthwhile remembering that turkey isn't meant to be served hot. Roast the turkey first, get it out of the oven, and then do your roast veg .. making sure that your fat is spitting hot before you place them in the roasting tray.

A big bird needs at least 30 minutes to rest, anyway.

Why would you want to? Personally, I can taste a reheated potato a mile off and really dislike the flavour so it is not something I would do. But I am still trying to work out why you would want to do this? They only take 45 minutes in with the meat once you have parboiled them.
