All I do is peel them and then leave them in a pan of cold salted water on top of the cooker

Should I be doing something else?
I would have thought coating them in oil would make them soggy

Peeled, par-boil, drain, cool, lay out on baking trays and open-freeze them. Once they are frozen bag them up and leave in the freezer until needed. Heat the fat , and toss in the frozen spuds to roast.

why do you have to keep them in water. i was going to par boil,drain and put on the tray until needed.

if you are not freezing them, the parboiled tatties will go black unless kept in water.

Peeled and left in water for me

Then parboiled, shaken in the pan to fluff up, add a wee bit of semolina powder to the pot, shake again then into roasting tin with smoking goose fat.... mmmmmmmmm!!

Chippo, do you then ccok from frozen? Also would it matter not bagging them if you were only freezing over night?

J. Oliver said something about par boiling, fluffing, tossing in hot oil and then putting in fridge over night.

about 5 minutes - stop as soon as you can fluff up the outside, otherwise they will fall apart.

i am not sure i will bother drosophila . might put them in a bowl to free up the baking trays and heat the oil
i was soo impressed last year so hope they work again this year

Sorry, missed your Q about bags. Wouldn't bother with the bag unless i had some handy - cover them with foil or cling film instead.

I'm going to part roast and then leave in the utility room (very cold!) overnight. Then just 20 mins in a hot oven, once my duck has come out to rest. Made life much easier last year, as I don't have a double oven. I use Mary Berry's instructions.

so if you freeze them do you have to put them in hot oil?

when i make them usually i just drizzle oil over them and put them in the oven but its not hot oil.

I was just looking at JO's blog and he definitely says parboil, pour over oil and leave in fridge overnight. I'm not sure I want to use enough oil to stop them going discoloured though.
