Making a lasagne. The sauce tastes too floury. Using soy ingredients for dairy free milk so not sure has that affected it. Any ideas how I can rescue it??

It needs to be simmered for a good 10 minutes. Have you done that?

loopylindi · 05/01/2022 13:43

If the sauce is still in the pan - add extra liquid and cook some more. If it's already on the pasta - I would try adding extra liquid on top, cover with foil and cook some more.

Sounds as if it’s just not cooked yet.

QueenLagertha · 05/01/2022 13:45

Great thank you trying that now 🙏🏻

What did you use instead of butter? I think if you haven’t cooked out flour properly at roux stage it’s hard to recover

QueenLagertha · 05/01/2022 13:54

@Bushkin vitalite dairy free spread. Still cooking it here. Not noticing much improvement. Wonder will it improve in the oven when cooking. Wishful thinking

Can't even use loads of cheese to disguise 🤦🏼‍♀️

You may be able to cook it if you keep stirring. I'm guessing you didn't cook the flour out enough or too much flour to the fat.

For future I've had success with olive oil instead of dairy free if that's an option

Gastropod · 05/01/2022 13:58

I find that soya milk does tend to have that "floury" taste, especially if you aren't used to it, so you might not be able to do much, other than make sure the other components are extra tasty to compensate for it!

Bushkin · 05/01/2022 14:01

What’s it going in?

SpeckledlyHen · 05/01/2022 14:03

@Bushkin

What’s it going in?
It literally tells you in the first sentence of the OP........................

Add a teaspoon of mustard (wholegrain preferably) and some thyme.

QueenLagertha · 05/01/2022 14:53

I threw it together (a lasagne) and dropped it off at friends house. She has a new baby and has been up all night. I'd say they will eat it gratefully 😂

thanks all for your suggestions. I simmered it and added more soy milk. Then I added some of the dairy free cheese. Didn't taste too bad in the end up and I just made sure not too put too much on the lasagne. The bolognese was very saucy anyway

I think what someone said upthread about soy tasting different might be part of the cause! This has never happened me before with regular white sauce.
