What to do with a red cabbage

I've got a huge red cabbage which I was going to use in a slaw over Christmas but I forgot to make it - I need suggestions for what can I do with it please.

I hate the normal stewed red cabbage with apple etc so not that please.

I'm just going to buy coleslaw next year!

I’ve got this winter slaw bookmarked to make this weekend.

Crisp Winter Slaw

You can also roast it in wedges. Or make a red cabbage and celeriac remoulade.

It’ll keep for weeks so you don’t have to use it all in one recipe.

I made a nice fresh slaw from a gousto recipe.

Half a red cabbage (grated, much easier than chopping), 2 carrots (grated), handful of chopped spring onions.

Mix and add a dressing of 15ml rice wine vinegar, 2 tbsp olive oil and a pinch of pepper, sugar and salt.

I stumbled on this recipe for red cabbage (no Mayo, it uses sesame oil and soy sauce and ginger & chilli instead) slaw back in the summer. We often use it with spicy food:

Pickle it in vinegar with peppercorns.

Or cook and freeze in portions (slice into strips then fry on high heat with 1 tbsp caraway seeds, then add a splash of red wine vinegar, sprinkle of sea salt, 1 tblsp sugar, cover and cook on low heat for 45 mins).

How about a crunchy Vietnamese style salad, with carrots, cabbage and spring onions. I make a dressing with lime juice, fish sauce and sugar mixed in a little water. Add lots of fresh herbs ( I,like chives and coriander), it's great and really tasty.

Red cabbage slaw as per above but I add a few raisins soaked in cyder vinegar -- and crisp apple in thin slices just before serving.

@MenaiMna that’s such a good idea. I loved the soups we used to have when I lived in Russia. I’ve just bought a Russian cookbook, I’ll have a look in there and hope it has a couple of good recipes!

Some great ideas there, thank you. I think I'll make a slaw/salad, we're trying to eat light and healthy so that sounds ideal.

Pickle it. This quick veg pickle recipe is brilliant and so versatile. I’ve a batch of half carrot, half red cabbage in the fridge which is delicious. The carrots have gone a gorgeous purple colour. Eating it with Dahl. Lovely in salads. Lasts about a week in the fridge.
