What can I do with mascarpone?

I received mascarpone as a substitute for ricotta in the last delivery. Does anyone have any recipes for savoury dishes please?

Good question, I used 3 spoonfuls for bread sauce and have no idea what to do with the rest.

Tomato and mascarpone risotto. Soften onions and garlic in oil, add risotto rice and stir for a minute, add some mixed herbs and chopped tomatoes, slowly add stock until rice is cooked. Stir through mascarpone, sun dried tomatoes and chopped basil. Yum.

I was going to suggest a tomato and mascarpone pasta sauce.
Or stuffed peppers with mascarpone, mushrooms spinach and tomato.

Warm a handful of sundried tomatoes in a pan in their original oil. Add diced chicken . Lid and simmer til chicken is cooked. Spoon in mascarpone. Serve on a bed of whatever, I like red cabbage or salad.

The main use for me is in tiramisu, which is the simplest and most delicious dessert EVER.
I occasionally used it as frosting for cupcakes.

Tiramisu, it's especially lovely made with DMF coffee rum

With jam on scones, way better than cream in our opinions

Stir into cooked pasta to make a lovely creamy sauce. It's good with spinach and salmon.

Mushrooms and smoked salmon in a frying pan. Add sweetcorn, then the mascarpone and pasta. Quick and easy and tastes delicious.

Use it in any savoury recipe where you would use cream.

Stuffed chicken breasts wrapped in prosciutto (or streaky bacon).

Mix mascarpone with garlic and herbs to your taste (we use thyme and rosemary), plenty of salt and pepper.

Cut a pocket in each chicken breast. Fill generously with cheese mixture. Close up the breast again and wrap with prosciutto, then secure with toothpicks/cocktail sticks. Brown them in a pan on the hob, then transfer to oven and roast for 20 - 30 minutes depending on size of breast. Squeeze a bit of lemon juice over them right at the end, about a minute before end of roasting time.

Really delicious and feels quite special. We like to serve it with garlic crushed potatoes and plenty of carrots dressed with butter or olive oil and a tiny touch of cumin.

Can't believe I forgot my favourite & it's very simple. I do a veggie version these days, but this works great with steak or chicken

Mushrooms cooked in butter with meat juices from steak/chicken, add black pepper a dash of soy sauce, cook & a add a tub of mascarpone. Melt into a sauce & add steak etc back to the pan for a few minutes & enjoy

Mix with a carton of passata to give you a white sauce substitute - good in baked pasta dishes. You can keep it in the fridge for a couple of days so you could do a pasta bake one day and use the rest as a sauce for chicken another.

I do broccoli pasta with mascarpone and blue cheese sauce. Just boil your pasta and broccoli. Gently warm mascarpone and chopped blue cheese (usually stilton, but whatever I have) till it melts and heats through. Chuck it all together with some Parmesan on top.

You could add it to anything you'd usually use a creamy sauce such as bechamel for, really, or it's delicious on pizza - I like it with ham and red onions. You don't need much of it on pizza though.

Or on a sort of Tarte alsacienne? Can't remember what its real name is!

Ohhhh I used to do a wonderful mushroom stroganoff. Must put that on the menu in the next week or two! Funny how you can forget old favourites, haven’t had it in at least a year now.

If you're after a dessert, raspberry brûlée is quick and easy. Put some fresh raspberries in the bottom of a ramekin and pack the mascarpone on top. Sprinkle some brown sugar over the top and pop under the grill until it's bubbling.

Eat it with a spoon. I love mascarpone.

Otherwise I do sundried tomato and mascarpone sauce on butternut noodles with breaded chicken, or stuff portobello mushrooms with it with garlic and blue cheese. Or flame some brandy or Marsala and melt it in with a little stock and some herbs to sauce chicken or steak. Or do creamy kievs. Blasted diet!
