Help! MIL coming to lunch tomorrow, what can we cook...

bearing in mind we are about to have several days of turkey, so nothing like that please!! Any ideas???

my favourite simple lunch is a spanish omlette and a tomato salad, which takes minutes to prepare

or soup with crusty bread

or bread, cheese, salad etc

or will MIL want a proper cooked lunch ??

got a feeling she wants the full-on lunch deal! But i'm feeling peckish imagining that spanish omlette...
is something with fish a good idea?

How about a fish pie? White sauce, chunks of smoked fish, pack of cooked mixed seafood, handful of frozen peas, topped with mash.

How about Baked Salmon in Pastry with creamy herb sauce

here's the recipe if your interested:

Servings: 6
Level of difficulty: Easy
Preparation Time: 45 minutes
Cooking Time: 35 minutes
Ingredients
For the salmon
2 x 500g wild salmon fillet, skinned
salt and fresh ground black pepper
25g currants
3 knobs stem ginger in syrup, drained and finely chopped
125g Butter, softened
450g ready made short crust pastry
1 egg yolk, lightly beaten
For the sauce
600ml single cream
2 egg yolks
2 tsp French mustard
2 tsp plain flour
125g butter, softened
1 lemon, juice only
1/2 small onion, finely chopped
1 small bunch mixed herbs, tarragon, parsley, chervil, chopped

Method

  1. Preheat the oven to 230C/gas 9.
  1. Check the salmon for small bones and seaon with salt and freshly ground black pepper.
  1. Work the currants, ginger and butter together and spread the mixture evenly over one side of one salmon fillet. Put the other fillet on top and spread the remaining butter over it.
  1. Roll out the pastry and wrap it neatly around the salmon.
  1. Brush with the egg yolk and bake for 30 minutes.
  1. To make the sauce, place all the ingredients into a blender and whiz until smooth and green.
  1. Pour the mixture into a saucepan set over another saucepan of gently simmering water. Heat gently, stirring regularly, until thickened and smooth. Pour the sauce into a warm bowl and serve with the salmon and some new potatoes.

great idea, in fact i was going for the fish pie so i literally called DH just now and suggested it. He said, 'that's fine but I told her we would just be having something light'!!!!

so i think it's back to the spanish omelette idea......

What a great recipe - I am thinking 27th Dec. now, for when MY parents come over.
I think fish is a good one for when everyone gets a bit turkeyed out...

I think fish is a fab way to get the taste of turkey out of your mouth too! I hope you have a great meal what ever you decide on!
