What are your favourite Greeb Roasting Tin recipes?

I've seen this book recommended time and time again on here but after two unsuccessful cooks, it's been sat on my charity pile since last summer. Before I finally get rid, can any of you share your favourite recipes?

The unsuccessful cooks were crispy gnocchi (dry and tough rather than crispy), sticky rice with squash, broccoli, chilli and garlic (mushy and off-balance).

Anything involving cream really. The leek and lentils with creme fraiche and feta;

sprouts and artichokes with cream and blue cheese.
I also like the olives, courgettes, sun dried tomatoes and feta.

My favourite recipe book!
We had the leek, feta and lentil bake yesterday, and the sprout and artichoke one today.
The quick cheese and onion tart is very easy and always popular here.
I like the caponata and also the polenta with tomatoes.

The beetroot, chickpea and coconut curry is one of the nicest things I cook. I’ve cooked it for a crowd and went down so well. Although I use potato and carrot instead of the beetroot. Sometimes throw in broccoli later on.

Didn't like the sweet potato curry. Very mushy.

I've just had a veggie one from the Quick Roasting Tin that even my meat-obsessed DH likes - we have it with a naan or flatbread. It's one of the easiest ones I've tried. Masala Roasted Corn.

I was just about to get up to have a fresh look at this myself - New Year, new recipes 😊 Current favourites are leeks and feta (if I'm feeling decadent I add shredded mozzarella and pine nuts) and harrissa sprouts.
