Gluten/Nut free, no fish or spicy?!

We are hosting friends for a casual dinner in the new year and I'm thinking through what to cook...
one person is gluten free
one with a nut allergy
one that doesn't eat fish
one that can't manage anything too spicy!

My first idea was lamb kleftiko followed by pavlova, but then found out one person does not like lamb 😱

Other than getting new friends (!!) does anyone have any suggestions?

What about chicken korma along with a spicier beef or vegetarian curry? People like two curries to choose from.

That could work...one of the couples did curry for us last time we went to them, so we know that everyone likes a (mild!) curry.

Anything you might normally cook with pasta just substitute gluten free pasta - tastes the same. For a lasagne, gluten free flour in the white sauce works just as well. Actually any sauce you might add flour to for thickening, gf flour will do the trick, or just regular cornflour should be ok.

Obviously it depends how fancy you want the meal to be. Anything potato or rice based should be ok. Or a chicken bake sort of thing with veg and potatoes? Hairy bikers have a nice sausage casserole recipe that I don’t have to modify and is a nice wintery meal - just check the sausages are gluten free.

I can’t eat gluten and DH has a severe nuts and seeds allergy so (aside from the fish and spice redirection) we cook like this all the time.

Shepherd’s pie
Honey and mustard roast ham, baked potatoes and creamed cabbage
Risotto
Stuffed chicken, creamy mash and tender stem broccoli
Ragu and polenta
Mushroom stroganoff and rice

Thanks @SickAndTiredAgain - my MIL is coeliac so do this fairly regularly, although can't quite get used to the gluten-free alternatives...made a gluten-free Christmas lunch last year with substitutes but was quite disappointing. May have just been me though ! 🤔

Wasn't sure what beef stifado was so looked it up, more of a stew-type thing than the kleftiko 'stick a hunk of meat on top of potatoes' style meal...might be a good choice though?

I do gluten free lasagne. Sheets are available in Asda, Teaco, etc. I use creme fraiche and nutmeg instead of white sauce. Bit of a treat for g/f relative as the ready prepared ones are vile!
On a similar theme, I make the bolognese sauce and top it with sliced tinned potatoes and cheese. Bake until crispy.
Both v yummy with a side salad.

As a coeliac I'd never subject people to gluten free pasta for a special meal!

I'd probably do some sort of tagine or risotto for a more casual meal. Tagine served with quinoa rather than cous cous

Oh really? I do wonder whether perhaps having eaten gluten free for so long, I’ve forgotten what the normal stuff tastes like!
