Please can I have your favourite leftover Turkey recipes

I think today is the last day we can safely eat it.

So far I have done a Turkey curry and Turkey in gravy with mash and yorkies.

Last year we tried pulled Turkey in a bbq sauce but I didn't really like it.

It needs to be substantial as I have hungry teens and a hungry DH so soup is a no.

It also needs to be adaptable to a low carb portion for a diabetic.

I would love that! However DH and eldest DD hate eggs so it would be a no go for all 4 of us

You don't absolutely need to use eggs- you could make the white sauce thicker. The eggs are hidden, not like a quiche where it tastes eggs!

I'm making a turkey and ham (and leek) pie later. Normally add white wine and a splash of cream to make the sauce.

Delia does a turkey, ham and mushroom pie in puff pastry. It's delicious. It's in her Christmas book...I'm struggling to find it online.

As others have said, a pie with turkey is a great idea. I've been pondering myself with what to do with my turkey leftovers, I made a stock yesterday with the carcass and bones so I think I'm going to use that with some of the leftover Turkey to make a turkey and vegetable risotto.

Anything that is safe to eat on the "real dregs" day goes into the food processor/blender. That means stuffing, meat of all sorts, bits of veg, spuds, whatever you have left that is edible. Add a chopped onion, some herbs and anything that you have that you fancy. Pulse and mix a few times and make patties at your favoured consistency.

Dip in flour, egg, and breadcrumbs. Fry off and voila, you have Christmas bubble and squeak cakes. They are gorgeous, I can guarantee it. Never one left in this house.

I made this last night and turned it into a pie filling, so omitted the dumplings. I use a whole can of cider and just top up the water to the total for the cider and stock. I used some left over veg and added mushrooms as didn't have leeks.
It is also nice as a casserole with the dumplings if you prefer.

We make turkey crunch - turkey, onion, mushrooms, bits of stuffing if there's any left, and chopped celery in a white sauce with a splash of white wine. Served with rice. It is a very important part of our Christmas process.

Turkey stir fry - throw in onion, seasoning, left over veg or stir fry veg and perhaps a bit of chorizo and add cooked rice and soy sauce plus sweet chilli sauce and voila! Takes about 15 mins.

I've just finished 2 Christmas pies, one for tonight and 1 for the freezer, turkey, ham, veg and a bit of cream added to the stock Xmas Smile
