I haven't made my Christmas cake yet, have I left it too late?

That's the question, can I still make my Christmas cake this week? My husband doesn't drink alchohol, so I don't feed it. I have found a simmer and stir Christmas cake recipe on the BBC good food website www.bbcgoodfood.com/recipes/simmer-stir-christmas-cake which looks tasty.

Nope. I never make mine till a couple of days before Xmas.

Nigella chocolate fruit cake ir BBC good food’s Hot Toddy Fruitcake are both excellent.

DH always leaves making his Christmas cake until the last minute. I don't eat it, but my mum reckons it's the best she's ever eaten and she is quite particular about Christmas cake

No, but you need to get a move on as you ideally want a day between making the cake and marzipanning it, and then one or two days for the marzipan to dry out a bit before icing it. (Then it depends if you are using royal icing or fondant, royal icing would need one to two days to harden, fondant should be ok the day after).

Or……… don’t marzipan/ice it. Lots of alternatives from edible glitter to glazed fruit and nuts on top.

(Can’t bear marzipan 🤢)

Yes true, they look good studded with almonds or hazelnuts, I keep meaning to try it one day but everyone else in our house likes icing.

Thats odd, I have looked up the last minute Jane Asher recipe on her website and she's changed it (she is flogging dried fruit mixes I think so this may be why).

I have it written down somewhere though I am sure if you need it op. It is really excellent and gets a lot of compliments!

Can't comment on your recipe but I always make 2, in October. And every year I think I should have done it earlier as the second one to be eaten is better than the first.

I made one last week though I did shove a load of brandy in it, I took a piece from the middle using the apple corer and it tastes great.

DC have now iced it and I fantasise about having a slice after lunch every day but DC are making me save it for Xmas. Blush
