Can I cook with Chateauneuf du Pape?

I was going to cook a slow cooked beef stew on Christmas Eve. I've been given a bottle of Chateauneuf du Pape but I don't drink red, so I figured I could use it in the stew. Googling red wines to cook with doesn't mention it so I was wondering if it would be ok?
The reason I don't drink red wine is because it gives me migraines. Will I get a migraine if I cook with it? I don't want to ruin Christmas Day!

Of course you can, it’s just a redwine, albeit usually an expensive choice for cooking

It's bloody expensive wine to cook with! Get a cheaper wine for the beef and regift the CdP.

Don't know about the migraine; I guess it depends on what in red wine triggers the migraine. The alcohol will evaporate with cooking but the tannins will remain (I guess?). Someone will be along soon with a scientific answer Grin

Red wine disagrees with me too, and I once had a very unfortunate experience after eating a casserole with red wine in it.

Fine to cook with it, although whatever it is that gives you a migraine might still be there once it's cooked.

Or ask a friend who enjoys wine to swap your Châteauneuf du Pape for a more bog standard one to cook with

Châteauneuf-du-Pape is generally quite tannic and cooking it down will concentrate the tannins initially, but the tannins should attach themselves to the fat and proteins in the stew and the harsh taste neutralised. However, the fullness of the wine itself could overpower the taste of the beef and, given that C-d-P in the UK starts at about £15 for anything remotely drinkable it might be better to do something else with it.

It's no accident that a classic dish such as boeuf Bourguignonne hails from Burgundy where the region's Pinot Noir wines are lighter and less tannic and often has notes of mushroom on the pallette.

Pop into Lidl and pick up a bottle of their Cotes du Rhône & cook with that. Then please send the Chateauneuf du Pape to me. I will give it a very good home, honest! Wink.

My godparents had a live-in maid/cook who once (accidentally!) made boeuf Bourguignonne with some yellow sticker stewing beef and... a bottle of Lafite Rothschild.

Anybody else reminded of the vintage episode of One Foot in the Grave which the BBC repeated last night? Featured a very rare bottle of wine which cost £850 (in 1990!). Delivered to the Meldrews in error, they opened and drank it, and Victor sloshed a bit into the bubble and squeak. Grin

Steak and ale seems the way to go here. Love your username, by the way, OP!
