OMG I have just made Nigellas really easy chocolate pistacio fudge that she did on tv the other day - IT IS F*ING YUMMY!!!

Seriously if you are really disorganised and need to made something quick to impress friends this is teh bollox. It is so simple my 6 and 8 year olds made it

Basically you get
350g dark chocolate (good 7-% stuff)
397g tin of condensed milk
pinch salt
30g butter

Melt together gently in a big pan and stir lots

150g pistacios (squashed a bit using the roliing pin/freezer bag method)

Mix nuts into chocolate goo, whack into a foil tray (helps to turn it out and no washing up!) Bung into fridge for a couple of hours.

Cut into lots of little pieces and wrap in bags/boxes/foil whatever

Seriously I am not joking that my kids did it. I watched and stirred a bit but that was my input!! We have made 12 tiny boxes for teachers and assorted friends, plus we have a big slab left for christmas day favours oin teh table

Sophable - I have been trying to think of the name of the place for ages, couldn't for the life of me rememer. Have checked e-mail now as it was a website. Not sure if you'll get it in time now?

It's this anyway.

I couldn't get shelled pistachios so I'm loooking at a bag of salted ones wondering if I can wash them? Either that or have them plain.

could you use the salted pistachios and leave out the pinch of salt from the recipe, would that balance it out?

Don't know if it's any help but Lakeland have got cellophane bags with sweets printed on or plain ones on their website. May have them in stock if you are near a store.

Putthatinyourpipeandsmokeit, I did mine in a ceramic-type square dish, buttered, and it came out fine. I didn't take it out in a slab; I cut it into squares and took them out individually and they didn't stick to the dish. Alternatively, you could line your container with tin foil and that, I think, would work as well as having a special foil dish. You wouldn't need more than one layer and I don't think the fudge would stick to it. Good luck!

Good idea to use foil to line a tray, that could work, but I would prob do a ceramic dish and no lining, cut out chunks at a time. The foil might ruck up as you try to spread the mixture out. Think I would do a v lightly buttered dish.

As to salted pishacios, I think I would wash them tbh. The pinch os salt is far less than the salt you would get in a bag os salted nuts.

Well done, putthatinyourpipeandsmokeit! If you keep it cold I imagine it should at least a couple of weeks. Are you giving it as presents?

Bumpers, no prob with the no-nuts I should think, except that it'll be even richer, and not as pretty with the green of the pistachios. But still a real treat in little squares after dins with coffee (or in the morning with tea, or in the afternoon . . . )

No nuts will be absolutely perfect still so don't worry - crikey - they'll be even quicker to make. Is that possible????
I took some down to an elderly friend who'd invited us for 'drinks' just now so we'll see what he reports when he's tried them.

They are pretty classy though i must say!

Ok, what's the secret? I have made this but it is far too sticky to cut up properly, it all comes away on the knife and if I packaged it up it would all stick together. Not only that but I had sacrifice the first row trying to get it out of the (buttered) pyrex dish.

So am now, not only do I not have any fudge to give as presents, I have wasted £5 worth of chocolate and I have a big slab of soft fudge going to waste. How can I salvage this? Why is mine so sticky/soft? It's been in over night.

what butter did you use and are you sure you used condensed milk rather than evaporated milk?

Yes condensed milk and real butter - made them yesterday and they are yummy, but very very rich!!!!!!!!!!!

Oh dear, bumperlicious, that doesn't sound right at all. I had to race to get mine from the pan to the tray as it was already thick and setting.

Could you use it as a cake topping? Infuriating I know but then at least it wont be wasted. The chocolate is so expensive.

or, if is it thick enough to form balls, even though it sticks to your hands you could roll them quickly in cocoa or hundreds and thousands to make little truffles?

er, NO, bumperlicious, not at all.

condensed milk has had loads of sugar slowly added to it so it is already like thick creamy fudgey stuff when it comes out of the tin. Evaporated milk is just that, evaporated. Tinned milk basicly.

Maybe you could make a joke out of it to friends and explain the mistake if they are for presents. There's no getting away from the annoyance of wasted chocolate though, the amount of times I've over warmed it and it's gone weird and grainy, completely ruined.

Something always goes wrong, maybe that's it and the rest of Christmas will be amazing!
