How to keep carrots/parsnips/sprouts fresh?

We have a big shop coming today with the veggies we need for Xmas dinner.

DS has just tested positive on LFT so it's possible we will be locked down nearer to Xmas day and unable to get more groceries.

How can I keep the veggies fresh until Xmas day, assuming we might not be able to get any more? I keep them in the fridge in their bags but within 3-4 days they always get mushy spots or go rubbery.

Should I parboil and freeze maybe?

Also without sounding like some kind of cleaning freak, give the fridge a damn good scrub. Personally I like a bit of bleach because I can't get the shelves and drawers out to wash with super hot water. Whenever something goes off it releases spores just ready to get at the next thing to come their way, damn good scrub! In total agreement with the others about keeping them dry and out of the plastic. Winter veg will keep for a good couple of weeks at least, it's how nature designed it.

Also I'm sorry but a positive LFT is more likely than not to be a positive PCR, so please don't risk giving it to anyone out side of your house whilst you're waiting for the official quarantine alert.

I use the car boot as the fridge is usually full.
but they mice can get to food in the car boot. it needs to be well packaged.

Take them out of the plastic, wrap in tin foil & keep in a cold spot or fridge. Even broccoli lasts us up to a couple of weeks this way

Oh & we have the Lakeland stay fresh bags. Foil works better for all bar potatoes

Where are you buying it from that it goes mushy in 3 days.

My weekly shop is a Friday, I'm definitely still eating fresh veg on a Thursday.
