Veggie Christmas pastry main?

Looking for a good recipe for a veggie main for Christmas. I'm in charge of this part of dinner for me, my sister and niece.

My sister is intolerant to onion, shallots, leek, asparagus and anything else in that family, so I can't buy anything pre-made as everything has onion in!

I am thinking some sort of pastry parcels with something like chestnuts, cranberries etc inside, which I can prepare in advance. No fussiness with anything else apart from the above intolerance so open to any ideas!

I’d go for a wellington with brie or feta, cranberry sauce and either butternut or little veggie cocktail sausages in.

Tasted a fab one the other day from the local farm shop that was sweet potato, ricotta, cheddar and sage.

My mum made an amazing pie one Christmas - brussel sprouts (lightly steamed in advance) and chestnuts in a cream sauce with a good zesting of nutmeg, in puff pastry. It was delicious.

Try this, from the Cranks cookbook by Nadine Abensur. Substitute the onions with carrots and celery. I halve the quantities to make 1 large Wellington. It's so good with cranberry sauce and lovely cold on Boxing Day.

By the way, you could experiment with using asafoetida, it needs using with caution but it imparts an allium flavour. You’d need to check it’s not in the allergen group for your sister first, but from the Wikipedia page, it’s in the celery family so should be okay?

Used to have the recipe for a lovely pie which was essentially a thick red wine sauce (like beef bourguignon) with chestnuts, mushrooms, peppers and anything else you cared to add in a pastry ring.

Another suggestion - a gougère, baked in a ring shape rather than individual puffs, with a filling of your choice in the centre. Creamy mushrooms would be good, you can jouj up their flavour with a squeeze of lemon and some paprika

There is a lovely Delia recipe for cheesy gougere with mushrooms in Madeira sauce, the sauce is very flavoursome so I'm sure you could omit or substitute any problem items. www.deliaonline.com/recipes/collections/recipes-for-2/cheese-choux-pastries-filled-with-mushrooms-in-madeira
