Nice fish main for Christmas

Bil is a pescatarian and so I need to do him a fish main for Christmas Day. He likes spice. He will eat it with the veg etc for the Christmas dinner... any ideas?

What about Cajun spiced salmon? I always find salmon so easy to cook. Wrapped in baking paper in the oven always turns out well. You could get a ‘side’ of salmon (not mega expensive like £7) so it looks more impressive and he can help himself to portion size. As a salmon portion we often find is a bit tiny.

I generally make something like this as it looks more impressive than just a piece of salmon but I replace the dill with thyme as my relative prefers it. I put carrots & onions in the foil also for more flavour.

Ooh I would go full retro with Salmon En Croute, done properly wrapped in pancake first. Either a small parcel or a full side so you can have remainder for Boxing day.

Oooh all sounding yummy. Don't think anything is too spicy.... good idea to make something that could be eaten cold in the evening..... doing a seafood platter for the evening.....

I’m following for ideas. I love fish and would happily eat it Christmas Day but never cook it because I can never think of anything that goes well with tradition sides. I just can’t imagine fish being encroached by gravy and cauliflower cheese!

Have you seen the whole stuffed sea bass in Lidl? It actually looks very nice. They also do a 3 fish roast

We're having homemade Beef Rogan Josh and as an alternative, I'm going to do a salmon dish I saw on Nadiya's cookery programme. It had some kind of crusting on and looked gorgeous.

That looks beautiful! I like the serving suggestion of a lemon butter sauce. I wonder what other sauces you could do with it ?

We have a whole salmon cooked in a fish brick stuffed with butter, lemon and dill. The fish brick is amazing as it heats up in the oven then we turn the oven of and it finishes cooking in the brick.

Lidl has half sides of salmon at the moment. One is now nestling in my freezer for Boxing Day.

Monkfish could be a good option - it's a bit more 'special occasion' and has a 'meaty' texture so works well against robust roast dinner sides.

Here's a recipe (which I haven't tried) which has some festive flavours of sage and cranberry stuffing, but obviously omit the streaky bacon wrapping.

Try salmon with pecan crust.
Spread a thin layer of mayonnaise on top of the salmon. Blitz some pecans in the processor (or chop well). Mix with melted butter and chives. Spread pecan mix on top of salmon and bake for about 20 mins. Works best with lots of fish fillets packed into a casserole dish, but if doing it for one then put the pecan topping down the sides too to prevent the fish from drying out. Very simple but also feels special.
