I want to start eating more vegetables, and decrease my intake of meat and processed food.

Do you know how I can make vegetables more appetising? I do like them, it's just they often seem a bit bland and unsatisfying.

I'd be really grateful if you would share your tastiest veg-based recipes.

Roasted veg lasagne.

Roast sliced courgettes, red/yellow peppers, red onion, cherry tomatoes and mushrooms until tender.

Make a sauce from finely chopped onion and garlic, tinned tomatoes, a veg stock cube, tblsp tomatoes puree, smoked paprika and Italian herb seasoning.

Chop the cooked veg roughly and stir into the sauce.

Layer with lasagne sheets and cheese sauce, top with breadcrumbs mixed with grated parmesan and pesto and bake.

Agree that we just don’t to just use boiled/steamed veg on the side in this country which is a little bit “meh”. Sorry to all the wonderful English cooks out there! It's pure projection on my part: I'm describing how vegetables are prepared in my house!

Love those sound of these Mediterranean flavours by the way.

Another very common thing to do in Italy is eat salad with (not for!) dinner every day. Mindset shift: this is what I need to do.

Honestly it's a bit of a faff to make but so worth it.

I threw it together for my vegetarian best mate when she came round midweek for dinner about 3 years ago. Now we have official lasagne Tuesdays.

If you want a quicker, easier version, just mix the veg and sauce with cooked pasta shells/penne, chuck in a dish and top with the cheese sauce and breadcrumbs.

The only problem is that we usually get through the entire thing between us...with chips Blush.

This is really good, tasty, satisfying, warming. I mix a little harissa paste into yogurt with salt and put a dollop on top www.bbcgoodfood.com/user/1370671/recipe/spicy-vegetable-tagine

Also delicious, and very easy. www.jamieoliver.com/recipes/pasta-recipes/sicilian-spaghetti-alla-norma/
