Easy longish lasting truffle (or sim.) recipe please ?

Thought dd might like to make some truffles or something easy to give to those who are here on christmas day but most recipes I find say they only last a couple of days and given that I'd like to do them a bit in advance and that they might not get eaten on christmas day I wondered if anyone had a suitable recipe ?

I make them. I have never heard of them only lasting a couple of days. My recipe has egg yolk, cream and butter in as well as chocolate, and as long as the truffles are kept in the fridge, I cannot see why they wouldn't last.

Meant to say it sounds like you want a simpler recipe than mine, but if you want to try mine, I will leave you the recipe.

No it is dead easy to make, just not the simplest in terms of ingredients.

Melt 6 ozs of dark cooking chocolate in a basin over a pan of hot water.

Beat in one egg yolk, 1oz butter/margarine, 1 tsp cream and whatever falvouring you want if you want flavouring (eg rum, sherry, whiskey, orange essence etc). I can't say how much flavouring - you have to taste as you go and see what is right.

Put in the fridge to set.

Then shape into balls and roll in chocolate strands or drinking chocolate powder.

I am never really sure how much the egg yolk gets cooked though so you might want to find another recipe that does not use egg.

I like to make mine in silicone ice cube trays, we make pretty stars and christmas tree shapes and they just "pop' out of the tray

forgot recipe

15 truffle:

225g choc melt over warm water
mix in 150ml double cream and 25g butter, pour into moulds and set in fridge

easy peasy

Thanks both - the moulds sound good but wonder ifI'd get one now... great recipe though. Am thinking if I froze them and just put them into boxes on christmas day they'd then last for a few days after christmas !

if you are near an ikea they do the ice cube trays, be careful about freezing as it may turn them a whiteish colour, a bit of alcohol in them will help them last longer

This (healthy and very tasty) one will last a while even when left at room temp:

Start with equal volumes of almond butter (or almonds/walnuts/pecans that you have blended yourself) and cocoa powder. Blend together and add a few tablespoons of maple syrup. It should be a firm doughy consistency. If not, add more cocoa or almond butter to get the right texture.
Roll in to truffley sized balls and roll in some cocoa, cinnamon, or muscavado sugar.
