Bored with healthy breakfast

I'm trying to plan or prepare breakfast in advance and I'm stuck in a rut of porridge (in slow cooker with raisins), toast and peanut butter, muesli, and the occasional omelette when I am not too rushed in the morning (two DCs, one with SEN), and overnight oats when it's warm (but even that I only have one recipe - milk/oats/frozen berries/nut butter.

Please inspire me (but seasonal i.e. no fresh strawberries in December and hopefully with protein/filling but not too much hassle or sugar). Bonus points if I can make it the night before. Oh and I don't like boiled/poached eggs!

Turkey bacon is handy, high protein and very quick. With the muffin things/scrambled egg maybe! It tastes better than it sounds. Also good on toast with tomato

Following for ideas. I hate cold breakfasts at this time of year but as a coeliac (including no oats, even GF) I am bored bored bored
Will try the egg cups
Flaked quinoa porridge is good too

Bubble and squeak. Does not have to have much potato in it, I often use left over swede and celeriac plus green stuff then beat it up in a bowl with an egg and instant mash powder. Fry, grill, bake, microwave or a combination of. Or make a batch one evening and reheat as required.

Bircher muesli is great. You can make your own using oats, raisins, sunflower seeds, chopped dried apples/apricots etc. I make the dry mix up in bulk then mix with yoghurt, grated apple and a splash of skim milk and leave overnight.

Also - steel cut oats in the slow cooker are great! Once cooked they will also keep in the fridge for a few days. I like mine with cinnamon and stewed apple (I sweeten the apple with monkfruit sweetener to keep the sugar level down).

I looked on youtube for some inspiration on soaked oats

found a variety of different combinations of flavours an d fruits

tbh I use frozen fruits as they are much cheaper and I can have a variety in the freezer for different toppings.

also started experimenting with buckwheat and soaking them, then draining and adding to the oats - gives the oats more crunch

Not that different but porridge with peanut butter is really good! I have banana in it too

You can make your own crunchy granola with porage oats, drizzle with olive oil or any oil (the more oil the crunchier), drizzle honey to taste, add chopped nuts or whole nuts and bake in the oven on a low temp 160? and keep turning until it is toasted and cruncy. Then add coconut, seeds, etc
I make a big bag full but as it is nicer than bought eat it twice as quickly....

I find granola is quite high calorie, even if home made, sadly.

I can't stand cheese for breakfast, but also a sandwich just doesn't feel right for breakfast. After all, if it was all about the ingredients we could just have a breakfast pill, couldn't we?

Chopped orange and grapefruit with Greek yogurt and puffed wheat (doesn't have sugar on).

Or chopped plums, walnuts, yoghurt and puffed wheat

I make batches of arepa in advance for my son - special kind of flour (pan harina) but super easy and freeze nicely. Can fill them with anything.

Also chia seed mug "bread" - a keto recipe which is very filling and makes in the microwave in 1.5 minutes

3 ingredients, water, salt and pan harina - 2 cups of water to 2 cups of harina. You'll see they have some variations mentioned but that's pretty much the basic recipe - it's also on the Pan Harina website and their packaging Smile
