Only I've just made a double recipe (12 eggs!) in 3 tins.

Or do I need to scoff the lot tomorrow?

I think that it would freeze no problems if you are able to resist. You have reminded me that I keep meaning to make one!

Have managed to eat only 2 slices so far! DH took one of the cakes in to work, and am going to have a go at freezing the spare one, if I can shoehorn it in.

Just the one to polish off then...

I suppose it depends on the sweetness/bitterness of the fruit - mine was OK.

I'm thinking of the one with loads of ground almonds. Is is it possible the almonds were past their best? That would give a really bitter taste
