Apologies if there's already a thread on this.

Can I have your traditional Christmas recipes please? Even if they're not Christmas related, I love hearing about other people's traditions. Mine is to make the ginger biscuits out of an old children's recipe book I found in a charity shop, the book was something to do with a farmyard although I've lost it now and have the recipe written down instead. I normally make tiny little trees, and decorate them with an icing pen and some little gold pearl things, and give them to neighbours.

Today I also made this ginger cake from Mary Berry - that's not the exact recipe but it's pretty close. It's flipping amazing so I think I'll be making more of it and making it a tradition in years to come!

Anyone else got recipes they return to every Christmas? If so, I want to hear about them!

Home made cranberry sauce. My parents were very suspicious the first time I made and brought a jar 'just in case'! Now I need to make extra for left over turkey, brie and cranberry toasties and to have with pate. I use a bbc good food recipe with port.
We are not a biscuit eating family so never have anything to offer unexpected guests to nibble with their coffee so I make tiffin again Christmas time (if guests are expected I bake or buy a cake/cookies). It lasts for ages and feels like a real treat.

Ooh what do you put in your tiffin? I've tried making it before but always ended up with either sandpaper or a sloppy, greasy mess.

I’m not a fan of Paul Hollywood, but his mince pie recipe is the best. I’ve tried others, but his is the recipe I return to year after year.
I always make a Baileys tiramisu for my FiL and a Black Forest trifle for DF.

This is my favourite stuffing recipe from Nigel Slater. I usually make it in advance and freeze. You could easily halve the ingredients. I cook it separately from the bird cos I like my stuffing crispy on top.

unsalted butter 1 tbsp

goose fat 1 tbsp

onions 4 medium, thinly sliced

cloves of garlic 2, chopped finely

leek 1, sliced into thin half moons

thyme 2 tbsp, chopped finely

leaves of sage 6, chopped finely

port ¼ cup

chestnuts 200g, vacuum-packed, chopped roughly

sausage meat 1kg

apples 200g, chopped into small chunks

eggs 2

Maldon salt

fresh ground black pepper

sourdough breadcrumbs 500g

In a medium-sized pot, heat the butter and goose fat together, then sauté the onions and garlic. Once softened, add the leek and chopped herbs. Add the port and bubble away for a few moments. Cook until unctuous.

If you buy the vacuum packs of chestnuts they can be blanched for a moment in their plastic, then chopped up in small chunks.

In a large bowl, make your stuffing. Mix all the ingredients together, adding the breadcrumbs last. The mixture should be sticky and moist, not too dry.

If you have too much stuffing you can make stuffing scones. Just shape the mixture into smallish blobs and bake on a greased oven tray for 20 minutes at 220C/gas mark 7 until firmish, brown and crisp. Keep warm, or flash in the oven just before serving.

I love these mince pies as well. Started making them with the kids when they were really young. Didn't make them last year so will need to make them this year (and freeze some).

I make Delia's classic Christmas pudding, but as I live in a fig, almond and carob producing part of the world, I've adapted it.

For the dried fruit my mix is about three quarters chopped figs and one quarter local raisins (big fat ones), which I soak in a combination of brandy, almond liquor and sour cherry liquor, instead of the barley wine. I also use carob flour instead of wheat to bind it all.

The flavour is incredibly, deliciously complex.

I've just Googled carob because I've never heard of it before... sadly I think I'm allergic to it, but it sounds great in your Christmas pudding @TheLeadbetterLife

I make mini no booze Christmas for the family and also chocolate orange biscuit cake as we do not like actual Christmas cake.
Dp might make a pavlova and we also bake gingerbread and iced biscuits.

I always make clementine prosecco jellies out of the Sainsbury’s Christmas magazine. They’re really light and fruity and are fab when we eat so much other stodgy stuff over Christmas.

I don’t know about you, but finding recipes and keeping track of them is a headache when they’re scattered all over!

A website has recently launched called Cook’s Tidy (www.cookstidy.com) where you can digitise recipe collections keeping them all together, plus it gives their nutritional & calorific information, and you can plan your menus then create shopping lists. Sounds like they have a lot of plans for future enhancements too! So a useful life hack imo ! Smile
