Christmas Stuffing

Ok, anyone got a good Christmas stuffing recipe? The only one I know is to chop and fry an onion and then add a tin of chestnut puree (unsweetened) and fry it all a bit. That's it. Nice but fancy something a bit different this year.

Great stuffing is easy peasy. In a big bowl combine, loads of breadcrumbs, finely chopped onion, garlic and fresh herbs, lots of seasoning, a bit of melted butter and a couple of beaten eggs. I add worchestire sauce and a dash of chilli sauce too. You could add your chestnut puree to the mix too or I sometimes add pine nuts and dried apricots.
I sometimes make extra and cook in a loaf tin as veggies can eat it too then.

We are very boring traditional and only like my Mum's basic recipe!

Loads of breadcrumbs, chopped onion, good sprinkling of parsley, sage and thyme, a chopped apple and a good squirt of lemon juice and then some melted butter. Quite a lot of melted butter in fact!

My dp always makes sausagemeat stuffing

1 kilo sausagemeat from Sains.
200 breadcrumbs, blitzed from white loaf
3-4 finely chopped onions
chopped fresh parsley 1/2 a pot approx
salt & black pepper pinch
garlic 2 gloves grated
2 teasp english mustard
1-2 tablespoon Henderson's relish..worcester sauce would do
3 beaten eggs.
Mix everything together, press into roasting tray. Bake at about 140C for about 1 hour, until a nice colour.
He then cuts into 2inch square, bags it, freezes it ready to use over Christmas. It also gets used as a meatloaf type thing. I don't eat meat but it smells nice!
